Plant Based Protein Sauce

I’ve dreamt of world peace and I’ve dreamt of animal peace. I am an asshole to humans, because most are to eachother, not to mention animals. I treat animals like I would a little baby that I was related to. Animals have evolved their way through this planet harder than we have and I respect their existance and safety.

This month I turn three:)

This month I will be three years plus Vegeterian.

I wanted to prepare ‘meat sauce’ Vegan-style the other day. I felt completely lost because of the word, ‘meatsauce’. I have no desire to even smell nasty-ass meat sauce. I went for the Vegan GOAL, which outsmarts a problem leaving happy parties. I’ve been conducting a list of ideas and for some reason found it unmotivating for a bloooooooody fucking mary. And now, I’ve been drinking tequila….. 100% AGAVE, of course. I do not have the patience, right now, to even consider recipes….

I never give measurements anyways. Because I’m a lazy asshole who cares too much with most of his time.

Vegan Smashed Potatoes

We all grow up differently. We all make different, but similar mistakes. We all do our best improving our lives. Some are better at doing that than others. With different obstacles, we do our damn best and sometimes it is not appreciated enough. All in all, we all care for our loved ones and passions & hobbies.

I grew up being a fan of a band, Soulfly, a newer age metal band involving spirituality and tribal aspects. Last night I was messing around with #AppleMusic and somehow wound up with Sepultura which made me wonder what the hell Soulfly was up to as the lead singer for Soulfly helped found Sepultura.

Now, I love me some of that there loud and fast metal, but I grew a stronger connection with Soulfly because of their ability to turn it down a notch and still be extremely awesome. I’m gonna take a guess and say that the last time that I bought a physical Soulfly CD was 2005-2006. I, however, made a playlist circa 2010 of their instrumental collection of songs literally named Soulfly. A concept that I love and every album has Soulfly 2, 3, 4, 5, 6, 7, 8, 9, 10 only in Roman numerals. I only had 1-5 until last night! Thank you Apple Music! And since I remember anything, the number seven has been my favorite due to watching John Elway sling those footballs growing up. Soulfly VII is now my favorite and it’s fate. I am obligated to share this playlist and I wish everyone on the planet Earth (and Mars:) could experience this playlist.

Along with this beautiful playlist, I’ve organized a beautiful moment that I have experienced in 2013. August 5th, 2013, to be exact. I often talk to animals while riding by and often take pictures and occasionally say “you’re all gonna die” or “I don’t eat you!”. I feel bad when I let them know their doom, but it is the cruel truth. This is when I had my iPhone on my handlebars with Lifeproof technology where it was easy to take photos while moving. I rode with a running herd of cattle like a damned cowboy. I’d like to think this was their idea of saying thank you for giving up meat that January.

Ⓥ Aioli ingredients:

  • Wash, reused (Earth Balance ‘Butter’, ‘Milk’, Corn Starch)
  • Garlic, minced
  • ‘Cream Cheese’, Daiya mmmmmmmm
  • Breading, reused (Cashews, SeaSalt, Breadcrumbs, Garlic, Oregano, Parsley)
  • Corn Meal

Mix to a somewhat solid consistency.

Ⓥutter ingredients:

  • Earth Balance ‘Butter’, half heated
  • Garlic, minced and lightly sauteed in ‘Butter’
  • Oil
  • Parsley, diced
  • Celery Salt
  • ‘Cream Cheese’, Daiya mmmmmmmmmmmm

Smashed Potatoes ingredients:

  • Potatoes, red and golden – diced and boiled then strained (time it right)
  • Ⓥ Aioli

  • Basil, fresh and diced
  • Parsley, fresh and diced
  • Oil, Olive
  • Garlic, minced
  • Onion, diced
  • ‘Cream Cheese’, Daiya mmmmm
  • Spinach, to garnish
  • Celery, diced
  • Carrot, diced
  • ‘Milk’, Almond
  • Cashews, SMASHED
  • Brown Sugar
  • Wine, white Vino is great
  • Dill Weed, fresh and chopped
  • Nutritional Yeast
  • Idaho Spuds, instant mashed for concistency assurance

Prep everything and go. Cook Veggies in Oil while boiling Potatoes. Add Wine and cook down and then add everything and crush and smash away. I enjoyed charred store-bought Pretzel Bun with the Ⓥutter.

2016 Ride II

Just to let the imaginary people whom I pretend read my (plant-based) chicken scratch (blogs), I do not plan on publishing per ride. I just had quite an interesting ride yesterday. And it was only my second ride this year.

Bluntly, winter cycling is a bitch. Especially, in Illinois along with many other cold and windy areas. I’ve ordered Bontrager OMW (Old Man Winter) shoes that are insulated and waterproof in December. And after my order, my bike doc called me and let me know that they are sold out until February. Since making the switch to clipless, I’ve been just dealing with the cold.

I met a (hired and well compensated) friend to ride fat bikes in hope it was going to snow like hell. I utilize the I&M Canal in the winter almost every ride. It has been flooded the past month at Lock 14, the LaSalle entrance. Long story short, I noticed it was not under water and took the driving entrance where I encountered a thin, super wet layer of ice where I biffed it HARD. I hit my head. I was wearing a helmet, luckily. I got up and continued. It was raining and I got soaked before I called it quits and retired for the day-ignoring the eventual snow.

I changed and left my socks on a good five minutes longer before changing them where I then experienced one of the worst and uncomfortable sensations ever. It was as if microscopic flesh eaters were eating my feet. They were bright red and itchy. I tried washing my feet. I tried lotion and I HATE lotion. I even jumped into the bathtub to wash my feet. It lasted a good half hour and then went away. I tried digging up an explanation. I found this..

Cold Rash

I group texted my cycling buddies and asked for their input. And they mentioned that it sounded like a beginning stage of frostbite which I believe is frost nip, technically. I never want to experience that sensation ever again. And I wouldn’t wish it on my worst enemy. Always wear a helmet and dress accordingly!

First 2016 Cycling Ride

I’ve been working super hard lately. Too hard, maybe. It was well above freezing today in January in Northern Illinois. Obviously El Nino makes a difference. Our climate change won’t be this drastic anytime soon. But, I am not the scientist. Just an asshole who likes bicycles, adventure and good beers. Dealing with a cold and floods, I just rode on! Grind them gears and just go and do anything you can to prevail. #RideOn

I’ve been vigorously trying to construct the perfect ‘blt’ever since finding Sweet Earth ‘Bacon’ in early December for the first time. It is a great product and will continue to purchase it. However, I’ve come to the conclusion that any ⓋLT is not perfect unless I have made my own Vegan bacon or Seican. I have a recipe map already made up, just need to pull that trigger and kill some plants! I truly hate plants and hope that they all die.

A ⓋLT (Vegan BLT) is common sense and easy to make and configure. I did make Vegan Island Dressing.

Vegan Island Dressing ingredients:

  • Vegenaise, mmmm (64) @ $9.98 = $0.16 per serving
  • Cucumber, deseeded & diced (4.5) @ $0.70 = $0.16 per serving
  • Radish, diced (7.5) @$1.19 = $0.16 per serving
  • Celery seed = $0.05 per serving (probably less)
  • Seasonings: GarlicP/OnionP/Paprika/Salt/Pepper/Sugar = $0.05 per serving
  • Shallot, diced (4.5) @ $0.72 = $0.16 per serving
  • Sriracha (96) @ $2.97 = $0.04 per serving
  • Balsamic Vinegar (32) @ $2.97 = $0.10 per serving

Prep, Mix & Spread. For roughly 88 cents per serving and for the number of servings you can have, the punch in the mouth of flavor compared to cost is unreal. Making a Vegan BLT with Vegan Island and pairing with a nice (local) IPA hits the spot so hard.

Battle

Many folks say that things happen for a reason. Prove it on an astronomical level and disprove that shit just happens. There is a huge difference from cause and effect and fate, basically being the difference of air and water between all living beings.

Tonight’s ride attempt was a fail. Hence, my battle. I am not a prancy-everything-has-to-be-perfect, cyclist. I am a grinder and a true sport. I got off of work early today to follow that with having a beer with my boss. I decided to ignore the wet atmosphere generously dampening my world and suited up to hop on the Fat Bike.  I, first of all, encountered a flood I was not going to ride through. I unclipped left and couldn’t unclip right and immediately noticed that I lost a screw.

The Elements and Technology hit me hard. Using the Fat Bike and my one free foot for balance on a damp slight slope was not easily achievable for first to get my foot out of my Bontrager cycling shoe and two to then remove my shoe from the Crank Brothers Eggbeater pedal to better protect my cold foot from the cold wetness. I threw in the white flag and walked the bike home. I am thankful for this happening close to home. I am thankful for bringing beers.

I’ve been riding bicycles pretty regularly since 2009. Where the cycling relapse, in college around and about Southern Illinois, begun and I have been evolving into a decently average bicyclist since.

 I’ve made many Gran Fondo’s, metric centuries, imperial centuries and mudfulness’ towards becoming a better cyclist. Why not have a hobby that menatlly and physically stengthens you. Why not obtain and flourish a sense of adventurism.

Remember when you were a child and you actually remember how enjoyable your days were? Have you ever experienced a sobering permi-smile joy as an adult? There is an ongoing group of peers who (including myself) have had that same childhood sense while riding a Fat Bike. A Fat Bike is a massive sand, snow, creek venturing MTB (mountain bike) machine. In this group I had the first Fat Bike. It may have been low end, but it worked for a few kilometers. Now, I’ve ridden with almost ten differently owned FATBIKES. It is unreal in the snow. UNREAL IN THE SNOW.

I’ve been concentrating on the mental aspect of cycling rather than the physical demands for years. At work, on a walk, in the pool, just anywhere, I try and bring myself to breaking points. I want to have an unbreakable mind. I put myself through extremely aggitating scenerios that I will not prematurely specifically blog all over your face.

I & M Canal’s Issue

The Illinos & Michigan Canal united the East Coast to the Gulf of Mexico with easier access as of 1848. According to Wikipedia, since 1964 eight engineered canal locks were designated a National Historic Landmark.

I’ve been getting to know this historic path extremely well since 2012. I documented a ride in September, 2012 that did not show any signs of a washout. I only documented aftermath of a fire that burned a field. And I have experienced and taken at least one decent bicycle ride via I&M Towpath that was washout-free. I remember this individual ride because of pictures and it was my contemplation process of ending a relationship. Without any detours or hazards, it was a free-thinking and relaxing ride.

In September the following (2013) year, was my next documentation of the I&M Canal. The towpath and I became close from then on. Ever since 2013 the same washout has been between Utica, IL and Ottawa, IL like one side is Mexico and the other the U.S with neither claiming the territory resulting in ultimate neglect..

There has been washouts along the Illinois & Michigan Canal, but have been fixed. There has been a near washout along the Hennepin Canal and even that has been fixed.

The most West part of the I&M Canal does contain a rich Irish and Polish heritage equalling a poor catholic culture with a life involved around hefty drinking and vices.

Furthermore, The I&M Canal provides immense opportunities for various activities from walking, running, adventurism and cycling. To pass the washout in and concludes risking injury, breaking the law, taking a high traffic road, and/or traveling extremely out of the way defeating the purpose of a worry free environment in which to roam.

I have heard IDNR has projected the project at a cost around $300,000.

Local businesses have offered to fund and construct permanent results only to be turned down. I’ve had about enough of this hazard/annoyance/apathy/lack-of-government-help

There has even been rumors of the BEAUTIFUL Starved Rock park to be promoted to a National Park. How is this neglect possible just outside of this unique beauty?

Chili EⓋolution

I finished this blog this morning spending two hours on it only for WordPress to fail and erase a huge chunk of data. So, I went for a ride.

Friday Morning Ride


  
I’ve been making kick-ass Chili for at least (well documented) five years now. It has only truly been documented a few times, but I mastered my style of chili probably ten years ago I just never knew it until around 5 years ago. I used to make this kick-ass DIP (for chips) using nothing but chicken and actual veggies working in a restaurant kitchen. You know, against the rules kitchen food, to feed the staff. And from there after plugging the concept in with chili type ideas, my style of Chili was born.


I cannot believe I had the mindset, at more than one points in the past, to keep my cheffing secrets, secrets until they made me millions. I have now forever retired from a kitchen that I do not own. Might as well share and help someone develop their own style.


October is kind of a HUGE month for me. The month includes or almost includes: 

  • Trek HulkRip 2nd Birthday (Sept 22nd)
  • Trek Darth Vader 1st Birthday (Oct 30th) 
  • 1000 Vegetarian Day (Oct 26th)
  • 100 Vegan Day (Oct 16th)

When your own personal well-being is healthy and you truly feel well, it makes life much easier. I feel when healthier than not, stress levels are down and energy levels are up.


Since making a Vegetarian lifestyle change, I’ve noticed extremely better health vitals and weight loss without a true workout routine, other than cycling. Every time that I donate blood (Double Red Cell), I am assured my once moderately high blood pressure is still low. My gym is adventure. My gym is outdoors.

Chili Secrets:

  • Use Vegetables instead of powders
  • Use lots of Vegetables
  • Chop everything yourself, don’t be a lazy ass
  • Marinate on lowest of simmers for hours
  • Drink a good Beer

It shouldn’t necessarily be about ourselves as it should be about the animals, about the environment and truly realizing and comprehending the bigger picture. There is an impact bigger than just one person, cutting out meat/dairy or even just consuming less.


 Chili ingredients (2009):

  • Ground Turkey, eewwwwww
  • Bell Peppers, diced
  • Hot Peppers, diced
  • Onion, diced
  • Salt/Pepper
  • Water sometimes Chicken broth
  • Beans
  • Corn
  • Tomatoes, stewed, diced or chopped (can)
  • Cilantro, chopped
  • Cheddar Cheese, gross

I’ve made different variations through the years. Creating a creamier sauce with adding Cheese until last year. I made Lentili without butter or oil and almost Vegan. I think I added Cheese that wasn’t completely Vegan.


 Ever find an artist (music band) that makes you super excited after you find out the length of their discography to listen to. And only an eighth of their music is what you want and the rest is garbage. I really appreciate good bands that can stay consistently different through the years. Not sounding the same on every album, but not changing their roots either.

 Yam Lentili ingredients:

  • Garlic, diced finely
  • Onion, diced
  • Celery, diced
  • Carrot, diced
  • Hot Peppers – Jalapeño, Serrano, Poblano, Chipotle (in Adobo), diced
  • Bell Peppers – Green, Red, Yellow, Orange, diced
  • Veggie Broth, splashy
  • Tomatoes, deseeded & chopped
  • Day, mmmmmm
  • Kale, chopped
  • Cilantro, chopped or frozen cubes 🙂 lots
  • SeaSalt/Pepper
  • Parsley, chopped
  • BalsamicVinegar/Sriracha/Sugar
  • Sweet Potato, chopped and baked on parchment paper
  • I think I added Mushrooms, sliced
  • Lentils, Red (split) & Green 🙂


  
  
 I ain’t here to give cooking lessons. Use your imagination and have FUN! I did also make kick-ass Vegan Corn Bread. Seriously, play with your food!


  
 Ⓥ Cream Corn ingredients:

  • Corn, kernels
  • Cashew ‘Milk’
  • Earth balance, ‘Butter’
  • SeaSalt/Sugar/ChipotleP/Onion&GarlicP/NutritionalYeast
  • Balsamic Vinegar
  • Flour
  • Onion, diced
  • Parsley, chopped
  • Corn Meal
  • Parsley, chopped

I just mixed everything together, covered and set out for a good hour.

  
  
ⓋornBread ingredients:

  • Balsamic Vinegar & Sriracha
  • Flour & Sugar
  • Corn Meal
  • Poblano Pepper, just a little & diced
  • Cilantro, diced
  • Baking Powder & Soda
  • Ⓥ Cream Corn

Simply mixed together and baked.


Lentili Colcannon ingredients:

  • Yam Lentili
  • Potatoes, red & russet roasted
  • Cashew ‘milk’
  • Daiya, mmmm
  • Onion, diced
  • Jalapeño, diced
  • Garlic, diced
  • Corn
  • Parsley & Cilantro, chopped finally finely
  • Grape Tomatoes
  • SeaSalt/Pepper/BalsamicVinegar/Sriracha
  • OnionP/GarlicP/Sugar

 

Balls & Strikes:

  • I dry roasted and did not add any oil. I used one pan with PARCHMENT PAPER:) Added things at different times because not all veggies roast in the same time. I then mixed everything together and topped with Yam Lentili. I did not roast the Grape Tomatoes. I heated them up in the Cashew ‘milk’.

10.07.15 I’m taking my love for Chicago-style dawgs and Vegan lifestyle to another level tonight as the Chicago Cubs play the Pittsburgh Pirates in a wildcard matchup. The Cubs, not being in the post-season since 2008, are a stellar team this season.

10.08.15 The Chicago Cubs won and Jake Arrieta threw a complete game SHO (shutout). Jake has shown a poise that I’ve never seen from a Cubs pitcher. His confidence and simply his persona on the mound sometimes gives me goosebumps. The Chicago Cubs acquired Jake (and Pedro Strop) from the Baltimore Orioles on July 2, 2013 for Steve Clevenger and Scott Feldman. At the time I was sad to see Feldman go, but heard both Arrieta and Strop had potential. Arrieta pitched well the remainder of 2013 and 2014. He went 14-7 with a 2.81 ERA (Earned Runs x 9(innings in a game) ÷ IP (Innings Pitched)). And his numbers are in for 2015 with a whopping 22 wins to only 6 losses. Having the best stats ever after the all-star break. Baseball has been around since the 19th century. Baseball has been a game for a few minutes.

I have created the Ⓥ Jake Arrieta’s. Ⓥ=Vegan. I made five of these monsters being strong, consistent & extremely healthy. The Ⓥ Jake Arrieta is a friendly neighborhood Char Dawg.


Chicago-style Relish ingredients:

  • Tomato, deseeded and diced
  • Cucumber, deseeded and diced
  • Onion, diced
  • Hot Peppers (Poblano & Jalapeno), deseeded and diced
  • Celery Seed
  • Celery Salt
  • SeaSalt/Pepper/ChipotleP/OnionP/GarlicP
  • Poppy Seed

MIX 🙂

Since being close to 100 days Vegan, my body has skyrocketed to amazing well-being and health. I’m going to live for 300 years. And I think that I am shrinking while still being very strong. I can ride a bicycle so much better and faster. My energy level is through the roof. And I feel AMAZING.


Ⓥ Jake Arrieta a Ⓥegan Chicago-style Lentili CharDawg ingredients:

  • Chicago-style Relish, mmmm
  • Buns, bigger the better
  • Daiya, mmmmmmmmmmmmm
  • Vegan Hot Dog (I use Lightlife Smart Dogs-JUMBO), charred
  • Mustard, organic 🙂
  • Lentili, mmmmmmmmmmmmm
  • Chipotle Powder, mmmmmm

Extra Innings:

  • Cut the ends of your smart dogs to keep from blistering.
  • Bake/Broil until your level of char or you patience allows.
  • Add already warm Lentili and Daiya and broil.
  • Broil Buns if desired, I’m a char-head.
  • Top with Chicago Relish, Organic Mustard and Chipotle Powder


  
I also came up with a salad concept of Roasted Veggies mixed with Romaine and Lentili as the ‘dressing’. It was good. I made Sweet Potato chips with my first batch of Ⓥ Jake Arrieta’s, but I was a little too tipsy to take a decently good pic. Hopefully today is much better with the art of photography. I also made three Dawgs a little different, yesterday. I feel like I’m forgetting some stuff. DAMNIT.

My choice of Vegan lifestyle obviously started with the easy decision of Vegetarianism close to three years ago. And while maintaining 100% Vegetarian lifestyle, I progressively made Vegan adaptations.

I did not survive every VeganFriday and I think I failed only one VeganWeekend after starting. I did, however, notice a difference in my digestive system and stomach between Vegetarianism and Veganism. Ultimately bringing me to the no-brainer decision of upgrading vegetarianism into Veganism as of 7.8.15.

I made SOUP for the first time in this colder turning time. And I was going to name it Souper Ⓥ Supe, but chose to shorten to Ⓥ Souper.

  
I found out that Sweet Potato skins are very edible and very good.

  
I resurrected my very first “real” bicycle in honor of his second birthday on September 22nd, in a 2014 Trek CrossRip. I’ve named him the HulkRip. I’ve ridden him through hell and back at over 7,000 km. He needed new cables, brakes, chain, cassette, chain ring and tape and pedals which I put on. He sat up at the bike shop for a good month awaiting a chain keeper. I’d like to keep HulkRip rideable for a long long time. And rode him for the first time in months yesterday.  Ⓥ Souper ingredients:

  • Tofu, soft
  • Soyrizzo, had to add another ‘z’ because I’m a cubbies fan
  • Mushroom, sliced
  • Sunflower Seeds, shelled & I used non salted
  • Garlic, minced
  • Radish, sliced
  • Onion, Diced and julienne sliced
  • Green Pepper, shorter julienne sliced
  • Tomato, beefsteak diced and grape-whole
  • Spinach
  • BalsamicVinegar/Oil
  • Earth Balance ‘butter’, mmmmm
  • Jasmine Rice, cooked
  • Lentils, cooked
  • Kale, frozen & NonGMO mmm
  • Eggplant, chopped
  • Zucchini, chopped
  • Sweet Potato, chopped w/ skin
  • Red Potato, chopped w/ skin
  • Russet Potato, chopped w/ skin
  • Cilantro, frozen cubes mmm
  • SeaSalt/Pepper/Cayenne
  • Serrano & Hot Peppers, diced
  • Veggie Broth

Insanity:

  

I actually started out making a breakfast stir-fry and severely enjoyed it before later making into soup.

  

  • Cook Rice and Lentils together while stir-frying and later drain before adding.
  • Heat Oil and add Garlic, Hot Peppers, Potatoes, diced Onion and Eggplant.
  • Add Tofu, Soyrizzo, Sunflower Seeds and diced Tomato. Cover and sauté.
  • Add Seasonings, Rice/Lentils and BalsamicVinegar with generous Earth balance! Cover
  • Always stir occasionally…duh
  • Add Kale, Zucchini, Green Pepper, Julienne Onion, Radish, Mushroom, Cilantro& Grape Tomatoes
  • Can’t forget the SPINACH
  • Cover and simmer low

  
I served the stir-fry w/ wheat toast with Earth balance. I FREAKING LOVE EARTH BALANCE.

To make Soup, I honestly just added Broth as it mixed and thickened extremely well. Very flavorful! And powerfully nutritious!
