Pasta Zero Spaghetti

Probably the most difficult thing about being diagnosed with Type One Diabetes, for me, is having to cut out a lot of my favorite foods from my diet. Monitoring Carb intake isn’t hard – it takes discipline and low carb food.


My goal is Not to take insulin if I don’t have to. The deciding factor is food consumed and the carbs included. Vegetables usually have moderate to extreme Carbs. Luckily, not all.


I tend to make exceptions for higher Carb foods that are high in Fiber and/or Protein. Also, I am not perfect.

I found this Pasta! It is Pasta Zero by Nasoya. It’s Vegan, gluten free, low Carb and Calories. For the first time since being diagnosed Diabetic, I enjoyed guiltless Spaghetti. It was delicious and I give it two thumbs up without the insulin:)



Lower Carb Pizza Cheat

Since being a young child I remember how special and comforting Pizza has been and my addiction to this wonderful food. The older I become, the less Pizza I can consume. Chicago style deep dish pizza is one of my favorite styles of Pizza to eat. That style has always been a occasional enjoyment because of its higher price. Regular deep dish or pan Pizza has been, in my eyes, the most economical for amount of Pizza density.


Since, checking my blood sugar 40-50 times a day with my Freestyle Libre 2 sensor, I’ve noticed how much Pizza and its large amounts of delicious Carbs bring havoc to my glucose levels. It’s unfortunate, but my Pizza addiction evolves, significantly, this year.


Store bought (frozen to be cooked) pizza is no longer good for me unless I want to inject extra insulin, being type ONE Diabetic. My goal is not to inject insulin, however, my body isn’t that simple.


Here’s my latest Pizza cheat. These low carb Tortillas aren’t very low carb, but the Fiber excuses the carbs – for the most part. The Egg White “wraps” along with the Mozzarella Cheese aren’t Vegan, but I do not see Veganism offering the delicious food in a low carb state as much as the Vegetarian food.


The Aldi low carb tortillas were 19 g carbs, 4 g protein and 15 g FIBER… Still jumping my blood sugar levels, just not as much as any other regular Pizza.



Untitled, Again

As of January 3rd, I’ve attempted to enter the world of sobriety. Quitting, drinking alcohol cold turkey, has not prevailed, but perseverance, understanding and optimism will help to succeed. Side note: I have not eaten cold turkey or any other meat in nine years as of today:) I quit smoking cigarettes 12+ years ago on the second attempt. Perfection is imaginary…. vegan bacon? Anyone? I’ve bettered myself in various ways over the years. It’s not impossible, but it takes will power and strivability (just made that word up:) I’m just trying to motivate and document myself while trying to motivate another person to try something difficult to better their life.


This is a huge lifestyle change, but I’m a person whom still NEEDS to eat:) I may not always eat Vegan. I do always eat Vegetarian. Post, in the future, might consist of a little dairy. Let me know what ya think:)

I saw this photo on instagram, this morning. It influenced me to blog my food creation from last night. As harsh as temperature changes may be, natural nature beauty is everywhere. I recommend looking up and following this individual on instagram:)


A Ⓥegan Protein Wrap was smothered with Veganaise. After smotherization, Arugula decorated this in-the-making edible artwork. Daiya “Mozz” completed this simplistic and light concept. Baked carefully. Consumed dangerously. An abundance of char was enjoyed.
