Vegan Zombie Apocolypse

I’ve been a big fan of Jon and his videos from Vegan Zombie since before my even Vegetarian days. I saw their post today of Nacho Cheese and took a watch, yo!

Nacho Cheese

thumb_IMG_3315_1024

I live in an area where eating out Vegan is almost nonexistent. One, because most (family) restaurants cannot be trusted to be true Vegan. Two, for the buck, it isn’t worth it. Three, I am a damn good cook and love knowing every single ingredient AND quality of every ingredient.

thumb_IMG_6840_1024

I watched The Vegan Zombie Nacho Cheese video and it’s been the first in awhile that I’ve seen of theirs. I must be moving up a notch in the Vegan world, because I had almost every single ingredient needed to make their Nacho Cheese and to give it my own flair. I just needed some seasonings. That’s all. I did not make yo cheese, but I made me some of that there Nacho Cheese. It was so good! I took the “Z” and gave a “Ⓥ” basically for super Veganism and then turned Apocolypse into more “Nacho” sounding with cheese as cheese. A-nacho-lipso

thumb_IMG_6995_1024

I’m removing “Cheese”.

thumb_IMG_6999_1024

Ⓥombie Anacholypso ingredients:

  • Cashews, raw or not
  • Walnuts, raw or not
  • Broth, Veggie
  • Cilantro, freshly chopped
  • SeaSalt/Pepper/Paprika
  • ChipotleP/OnionP/GarlicP/TurmericP
  • Peppers (green, red & yellow), roasted and skinned

Mixed in a blender. Served smothering the life out of Tortilla Chips garnished with Cilantro. I also threw some store-bought Salsa Verde on them as well. Went extremely well together.

Props to the Vegan Zombie for being cool, funny and always having great ideas. Recipes are guidelines. Never follow to a “T”.

In other news, I will be obtaining some Follow Your Heart Vegan Egg as soon as Monday. And I am ecstatic! Work hard, play harder! CHEERS

Last Friday was my Ⓥirthday! I am three. Three years Vegetarian and now bettered by Veganism. I made some Vegan desserts! Please drink good beers and eat Vegan food responsibly:) Bike ride tomorrow!

Plant-Based Protein Sauce

It is time to redeem my prior attempt to blog your arteries of a Vegan meatless sauce with loads of protein. Just like my consumed beers and lack of reviews, I have not measured ingredients except water for my food in so many years. They are not recipes, I guess. I do not wish to tell people how to prepare food, let alone, teach cooking basics. I do wish to influence others to try a plant-based lifestyle and to be creative. I think eating out is extremely overrated. It needs to be a necessity to want to know exactly what is in the food being prepared to keep us healthy and to ensure prosperity.

thumb_IMG_6179_1024

I am a modest beer snob, who cannot depict every accent or flavor in good beer. I probably never will. I also will not pretend to know. I know good beer from bad beer and that is good enough to me. It is a necessity to me to relax and unwind regularly. I am extremely good at documenting it. And now, I am just kind of (soberly) rambling. I’m overdue for a good bike ride. It was like 10° C yesterday, but I did not have time to make it out. Anyways….

LBⓋ 12/10 Insalata Minima

thumb_IMG_6834_1024

I picked up a few vines full of attached ripe tomatoes yesterday. And I’ve never had better raw store-bought tomatoes ever in my life. I almost ate all of them. Here’s the mathematics. I bought 15, I ate ten and threw out two vines. I did not feel sick, but did become dependant of these tomatoes. Consuming a surplus of raw Tomatoes is not at all dangerous. Please try them if you come across them!

Bushel Boy

Insalata Minima translates from Italian to Minimal Salad in English, I believe. It was easy to prep, cheap and delicious.

thumb_IMG_6826_1024

LBⓋ = Low Budget Vegan

thumb_IMG_6837_1024

LBⓋ 12/10 Insalata Minimalist ingredients:

  • Lettuce, Iceberg shaved (6) @ $1.38 = $0.23 per serving
  • Spinach, baby & sliced (3.5) @ $1.99 = $0.57 per serving
  • Tomato, fresh & quartered (4) @3.34 = $0.84 per serving
  • Green Olive, Garlic stuffed (8) @ $3.98 = $0.50 per serving
  • SeaSalt (357) @ $1.99 = $0.01 per serving
  • Chipotle seasoning (105) @ $5.99 = $0.06 per serving

At $2.21 and the number of good sized salads that can be constructed, awards this a great starter for a hot date with a nice bottle of red or white wine. Vino, that is! No dressing needed, the natural flavor and texture minus the oil and other shit normally destroying salads is truly unbelievable.

I also made a sandwich…

thumb_IMG_6835_1024

A delicious sandwich ringing in at $2.10 per serving and literally falls apart in your (my) mouth with the minimalist of chewing needed. A lazy mans sandwich. Enjoy a good beer and take a hike or explore a new route on a bicycle! Happy weekend.

Daiya VS Daiya

I’ve been a huge fan of Daiya products for some time now. I love all of their Plant-Based ‘cheese’ products. I love their ‘cream cheese’ and wish I could try more and more of their products. They aren’t the cheapest products, but are at a very high standard of quality. And if I have the money, give me the good stuff!

thumb_IMG_6822_1024

I put Daiya up against themselves in a battle against plants. I cooked a frozen Daiya pizza and was super impressed. And then I took a page from my LBV (Low Budget Vegan) recipes and made a Daiya pizza and Daiya won!

555070_400226636702170_678263609_n

I would never allow plants to lose.

thumb_FGKZ1639_1024

Daiya Pie (LBV) ingredients:

  • Tortilla, XL
  • Sauce, store-bought pizza
  • Paprika
  • Daiya, mmmmmmmm
  • Spinach, baby sliced
  • Tomato, fresh and julienne sliced and salted
  • ‘Bacon’, plant-based

I paired both with a Rogue 4 Hop (session) IPA.

thumb_IMG_6796_1024

I originally planned on low-heat cooking the Daiya-prepared pie and then broiling to finish, if needed. I read the instructions and was shocked to hear it read, “cook at 475° F for 10-15 minutes.” I chose to follow the instructions only this once. I still had to broil to finish, but the aroma this tiny little plant-based Vegan pie produced was unreal! It’s worth the price just for that amazing aroma. The taste was very very good, as well.

thumb_CTHE9056_1024

I won’t consume Daiya pizza often as I am a (self) diagnosed pizza addict, but any reason for a pizza party – DAIYA will have a definite spot in the mix. For your next pizza party, give DAIYA a shot!

Agave Ⓥiesta Nachos

I’ve heard rumors of good true Agave Tequila. I’ve heard it is technically a stimulant and not a depressant like all other alcohols. A bartender told me that once…

thumb_IMG_6814_1024

I do know with a certain amount of drinks in you, you’re brain is quicker and in a groove. I may have just made that up, but it sounds good to me. All in all, if you’re cooking with alcohol, you need to enjoy some of it while cooking. It is a rule.

  • Garlic, fresh and minced
  • Balsamic Vinegar
  • Sriracha, cock sauce

  • Lime, juiced and leftover slice for garnish
  • Avocado, chopped

  • Onion, diced

  • Garlic, fresh and minced
  • Olive, black and pitted
  • Potato, russet and sweet chopped
  • Srirsalmic, mmmmmm
  • Tequila, real w/ Agave
  • Salsa Verde, mmmmmmm

Saute Veggies and add accordingly. I ain’t no teacher, just use common sense.

thumb_IMG_6813_1024

Agave Ⓥiesta Nachos ingredients:

  • Agave Ⓥiesta
  • Veggie Broth
  • Nutritional Yeast
  • SeaSalt/Pepper
  • Chipotle seasoning, generous 🙂
  • Tortilla Chips, NonGMO Tostitos are great
  • Pico de gallo, I used store-bought
  • Cilantro, freshly chopped
  • Avocado, sliced
  • Lime

Heat Agave Ⓥiesta and broth with seasonings and simmer. Top how you’d like. SO GOOD!

Vegan Smashed Potatoes

We all grow up differently. We all make different, but similar mistakes. We all do our best improving our lives. Some are better at doing that than others. With different obstacles, we do our damn best and sometimes it is not appreciated enough. All in all, we all care for our loved ones and passions & hobbies.

thumb_IMG_6370_1024

I grew up being a fan of a band, Soulfly, a newer age metal band involving spirituality and tribal aspects. Last night I was messing around with #AppleMusic and somehow wound up with Sepultura which made me wonder what the hell Soulfly was up to as the lead singer for Soulfly helped found Sepultura.

thumb_arte_1024

Now, I love me some of that there loud and fast metal, but I grew a stronger connection with Soulfly because of their ability to turn it down a notch and still be extremely awesome. I’m gonna take a guess and say that the last time that I bought a physical Soulfly CD was 2005-2006. I, however, made a playlist circa 2010 of their instrumental collection of songs literally named Soulfly. A concept that I love and every album has Soulfly 2, 3, 4, 5, 6, 7, 8, 9, 10 only in Roman numerals. I only had 1-5 until last night! Thank you Apple Music! And since I remember anything, the number seven has been my favorite due to watching John Elway sling those footballs growing up. Soulfly VII is now my favorite and it’s fate. I am obligated to share this playlist and I wish everyone on the planet Earth (and Mars:) could experience this playlist.

thumb_IMG_6406_1024

Along with this beautiful playlist, I’ve organized a beautiful moment that I have experienced in 2013. August 5th, 2013, to be exact. I often talk to animals while riding by and often take pictures and occasionally say “you’re all gonna die” or “I don’t eat you!”. I feel bad when I let them know their doom, but it is the cruel truth. This is when I had my iPhone on my handlebars with Lifeproof technology where it was easy to take photos while moving. I rode with a running herd of cattle like a damned cowboy. I’d like to think this was their idea of saying thank you for giving up meat that January.

This recipe is amazing and worth a try and I highly recommend good music to accompany a cooking adventure. Not to mention a good beer or glass of wine. Take a load off, you work hard at caring for your loved ones.

Old Man Winter

thumb_IMG_6365_1024

Not everyone has experienced a Northern Illinois winter, let alone ride bicycles in Northern Illinois winter weather. The hardest part of winter cycling is being comfortable with freezing winds, ice, snow and bears – oh my. I will say it is easier to remain comfortable in super cold or warm climates. The 2-10 degree Celcius range is tricky and is best suited with removable and addable layers.

thumb_IMG_6337_1024

Riding a FatBike is basically a moving furnace conducting your own heat or a steam locomotive with the streaming trailing line of hot steam in a dissolving midst. And your central body is often warm and comfortable as long as you let the steam escape while still staying insulated. Fingers and toes are often the first to get uncomfortably cold.

thumb_IMG_6368_1024

Booze helps a bit, but proper gear is a must. I, for the first time, was completely comfortable on a time tenured sub-freezing ride with an average temp of 10° in 120 elapsed minutes.

I’ve known for some time that Thinsulate was an outstanding winter ally and I finally have amazing gear to truly backup my cycling nonsense and babblings. Here we go!

My Perfect 10° Cycling Gear ingredients:

The shoes were outstanding for two hours and the same goes for the gloves. I am contemplating a Gran Fondo this weekend. On a FatBike it’s gonna consume a good 7-8 hours. It may be a little warmer, but we will see.

I don’t know about anyone else, but some of these terms for these ingredients are somewwhat sexual. I’m not saying that I’m not a pervert, I’m just saying.

So, I had a Sushi idea in my head, but got lazy and decided to be a meatless lover. If that makes any sense. I’m a dude, I might practice a Vegan lifestyle, but I like to eat Vegan like a man, I think. Not too sure how other Vegan males deplete their hunger, but I am well aware of my processes.

Sushi Browned Rice ingredients:

Xmas Feast

I might’ve been guilty of forcing family members to enjoy  a taste of Veganism this holiday season. I did make sure it would be super tasty. This was my second Tofurky Veggie Roast made in the last month. I had already come up with an idea before actually reading their instructions/recommendations. I was glad we were on the same page.

thumb_IMG_4513_1024

I made two different feasts a couple of weeks apart. Both being very similar, the first being a trial. It took me quite a few minutes to make sense of my notes, but I think I got it. I think we’re good. Let’s go!

thumb_IMG_3567_1024

The only mistake was not being sober enough both instances to take a decent picture. My tastebuds, however, took a few amazing photographs.

Trial Xmas Feast ingredients:

  • ⓋraⓋy or GraⓋy

  • Tofurky Veggie Roast, thawed
  • Veggies
  • A beer or two to help the brain to think freely

thumb_IMG_3995_1024

ⓋraⓋy or GraⓋy ingredients:

  • Chipotle/Chili/Paprika seasonings
  • Fresh Garlic/Turmeric, minced
  • SeaSalt/pepper/Sage/Savory
  • NutritionalYeast/LiquidSmoke/BrownSugar
  • Oil/BalsamicVinegar
  • Water
  • Onion/Celery/Carrot/Mushroom/Radish, super diced
  • Serrano, deseed or not for more spice, super diced

thumb_IMG_4539_1024

GraⓋy grooiness:

  • Heat oil and add Turmeric & Garlic and slightly brown.
  • Add super diced Veggies and stir for 10 minutes.
  • Season, add Balsamic Vinegar/Liquid Smoke and cook for a few more minutes before adding water.
  • Simmer and cook down before blending for smootherness.

thumb_IMG_4512_1024

Veggie Mix ingredients:

  • Brown Rice, dry
  • Carrots, baby
  • Celery, chopped
  • Onion, sliced or diced
  • Potato, chopped
  • Lightlife ‘Sausage’ & ‘Beef’, torn
  • Raw Cashews, smashed
  • SeaSalt/Pepper/Fennel/Rosemary
  • Broth/BalsamicVinegar
  • Lentils, dry

Mix. And don’t worry about getting those Cashews too smashed. They can hold their own.

thumb_IMG_3694_1024

Use a casserole dish and fill with Veggies. Make Veggie Roast fit in the middle of Veggies and cover with GraⓋy. Save GraⓋy for afterwards, also.

Very tasty and a job well done; deserving some tinkering for a Xmas meal.
