I have a new theory. Studies have shown, in a sense, the same theory with sunlight. People are generally much happier when they experience more sun. People who do not experience a surplus of sunlight are generally not as happy as to those showered in vastly radiant sunshine. Recently, I jumped on the “artificial daylight” bandwagon with LED lightbulbs. They are extremely bright with use of less energy. They are daylight Light-Emitting Diodes that generally make me happier anytime I need artificial lighting to see than my old standard power-sucking light bulbs. Maybe it’s the brighter, cleaner artificial light that makes me happier. Maybe it’s the economical perks that make me happier. Maybe it’s the combination of the many pros without a single con. LEDs are Smart. LEDs are beyond electricity.

This concept is basically a modular (home) sandwich. Separate sandwiches are constructed before combining into one.

Daiya ‘cheese’ lover Pizza is baked and sliced into four sandwich sized pieces. Whole Wheat Bread is grilled on both sides and set aside for a few minutes. The daiya pi wiches were constructed with Daiya slices under the Pizza on the grilled Bread. The sandwiches were lathering with Earth Balance Coconut Spread to be set aside after grilling both sides.

Onion Bagels smothered with Earth Balance Coconut Oil were grilled on the flats (insides.) A Beyond Meat Beast Burger was baked before baking the patty in Garlic Chipotle Molasses which consists of Garlic Sauce (boiled Potato, Cashew and Onion blended down with Garlic, Veggie Broth, Crushed Red Pepper, SeaSalt, Pepper, Paprika, Sugar, Garlic P, Parsley and Instant Mashed Potatoes to help find consistency.), Chipotle Sauce, Chipotle P, Molasses, Paprika, Balsamic Vinegar, Sugar, SeaSalt, Cumin and Mustard.

The grilled Onion Bagels were generously smeared with Tofutti Herbs & Chives Better Than Cream Cheese. The two halves were constructed with Daiya slices melted on top. A Beast Burger was between the two halves when they folded together, smartly pointing the Daiya Pi face up and infusing non dairy with meatless protein greatness. A plant based massacre has unfolded with delicious Craft Beers.

I used to think and almost judge February for its unique spelling and constantly wonder why January isn’t spelt very similarly. Janruary? I’ve figured out that there is nothing wrong with one being different than the other. Excepting things that aren’t normal are a way of life and should be the way of the world. Cheers!

A Time Science Shorty

I find it entertaining and fascinating attempting trackage of my usage of time over a certain span of time. And this span of time will be from myself falling asleep Friday night May 14th at 10:19 pm (central time) through when I fell asleep Wednesday morning at 12:48 am (central time), creating a span of 98 hours and 30 minutes or 5,910 minutes or 354,600 seconds. It is less than 1% of the time an entire century, but never the less, all time is important. Basically, the time that I am tracking is Saturday May 14th through Tuesday May 17th with a little overhang to even out the sleep.

Out of 98.5 H, I have 92% of my time documented with strong documentation. However, I still want to be above 95%. I will call a 92% over just short of 100 hours of time a C+. There are various excuses for error. I did take a few naps Sunday, recovering from a hellacious Saturday. It very well could be that my guessing estimations are off just a bit. I fully understand that it would be extremely hard to reach 100%, but 95+% is reachable.

I had a conversation, shortly last night, if Netflix or Hulu was better. My response was Apple Music. It pisses me off when it takes me 20 minutes to find something that I kind of want to watch. Little things like that need to be accounted for. I’m gonna have to concentrate on this for my annual June Time Science. Speaking of Apple Music, I have had my first beef (and being Vegan, I extremely despise beef) with Apple Music not having more than one song from an artist who I’d like to check out. YouTube has Apple Music beat on material from the instrumental Post-Rock Canadians, DestroyAllDreamers. It is disappointing that I may have to try and pirate their music in order to add it to playlists.

 Sunday was a day of recuperation and I took four naps and ate so much food. I’m not sure yet of how my Garmin watch does with naps. Naps may need to be documented manually for more accurate documentation. We will see.

I slept 11.2% of the 98.5 hours in a deep sleep of the entire 31% slept. And slept deeply 36% of the 30.3 hours. That averages over 7.5 hours per night and short of an average of 3 hours of deep sleep (or dleep?) per night. Not too bad, if you ask me. Although, last night’s dleep was only 24 freaking minutes. That is interesting. I rode my bike 8.5% of the total time for a distance of just over 175 (108 miles) km with an elevation gain of 826 (2,708 ft) meters. I walked 57.3 (35.6 miles) km over 56,234 steps. I walk much more when I am at work. I ride much more when I am not at work. The art of balance. I also eat more when I am not at work. I burned 30,521 calories over this span and probably only consumed a fraction of those calories burnt. I worked 22.43 hours in two days of the four days. I did not take a break either day.

The rest of the time usually overlaps and needs to be documented better. I spent 1.25 hours shopping. I spent two hours of traveling by machine. My time in a kitchen and also eating was calculated at six hours and also needs better documentation. A total of five hours were totaled for Cubs/Socializing, aka drinking beer outside of the closet:) And the very last thing is a mixture of maintenance (shower/laundry/cleaning/dishes/fixing), internet/blogging and Netflix/movie. I tallied that sum to be 14.5 hours, but is probably more which would help fix the gap. Here is a better overview.

Fingerlinging Good

I wish my ten fingers and ten toes were ever-growing Fingerling Potatoes that grew without a sense of feeling just as fingernails and toenails do. Every once in a while a good trimming and consumption is needed in this somewhat twisted fantasy, Jeffrey Fingerling Hands.

I grew up watching Robin Williams in various movies and will always be a fan of his. I named a sauce, Robin Dilliams, in honor of his talents and hilariousness. He also rode bicycles, so it is only right in this snow-blog, shaken vigorously only spraying 2016 Chicago Cubs champagne bubbles everywhere instead of false snow inside, world I have created.

Robin Dilliams ingredients:

  • ‘Butter’, Earth Balance
  • Dill Weed, chopped
  • Sriracha, cock sauce
  • Lemon, juices – no seeds, no stems
  • Pizza sauce, or tomato sauce
  • Corn Starch, for consistency
  • SeaSalt/Pepper/BrownSugar

Heat, mix and love.

Rice ingredients:

  • Basmati Rice
  • Split Peas, green
  • Carrot, diced
  • BayLeaves/BrownSugar/SeaSalt/Pepper

Cook.

  • ‘Butter’, Earth Balance
  • Tofu, extra firmly crumbled
  • Parsley, chopped

Mix.

I rode to the store on my muddy Trek Darth Vader for Tomatoes. It looks more like Spring, it was just super chilly today.

Fingerlinging Good ingredients:

  • Robin Dilliams, heated
  • Rice, heated w/ Bay Leaves removed
  • Spinach, sliced
  • Dill, chopped and a nice looking branch for garnish
  • Oil, just a little
  • Garlic, sliced
  • Cashew, whole & raw
  • Fingerling Potatoes, red and golden
  • Lemon, juices no seeds nor stems
  • Sriracha/BalsamicVinegar

Sauté, strongly with Lemon/Sriracha/Balsamic added towards the end.

  • Tomatoes, red and yellow cherry/grape
  • SeaSalt/Pepper/OnionP/GarlicP

Add ingredients and season while simmering for a bit.

I constructed a Plant-Based amphitheater of flavorful texture where flavor battles texture in an exploding cherry tomato eruption of plant genocide fury. Battles which heighten senses in a disarray as intense as a LSD high might.

The foundation started with sliced Spinach and quickly to anchor the butchered Spinach was the damp Tofunated Rice embedded with Split Peas and Carrot still wet with Earth Balance.

I constructed the domed roof with massive blackened Fingerling Potatoes creating a solidly unbreakable structure and some lovely decor of Cherry Tomatoes to help the spectators feel at home.

The wonderful infrastructure is finished and held together with Cashews and Garlic. No amazing accomplishment is final without splashing a little color and a flag to truly represent what this all means. Robin Dilliams covered roof and exterior pillars stand tall with an enormous flag flapping in the gusty breeze at the very top symbolizing non other than Dill.

Most of the time, something truly artery clogging usually murderous involving animals is excuse and motivation for my blog clogging Vegan food ideas. Meat is murder. Cheese and dairy is animal torture. I recently made Vegan Spaghetti Carbonara.

Yesterday, I enjoyed something called Jesus Toast. I rode through wet and super soft mud/gravel to get to this toast. Only to later realize this Jesus Toast was created by a SIUC Saluki alum. And this Jesus Toast is not your traditional food. Food to me, but a craft beer from Hailstorm Brewing Company out of Tinley Park, IL. The beer is a black rye IPA and very decent. The name is unique and entertaining alone. Made from a Saluki alum is a cherry on top. I also enjoyed an Alabama Hot Tub by Hailstorm.

Saturday, I rode my heart out along a multi-surfaced Gran Fondo of 100+ KMs. I set a most ascent record with my Garmin Edge 1000 with an ascent of 592 meters aka just short of 2,000 feet. It was an asskicker.

Spaghetti Carbonara ingredients:

  • Spaghetti, whole wheat & cooked not rinsed
  • Onion, diced
  • Garlic, freshly minced
  • Mushroom, sliced
  • ‘Milk’, rice, soy or cashew non-dairy
  • Egg replacer
  • Pepper, coarse
  • Tempeh, grilled
  • Daiya
  • Nutritional Yeast
  • Parsley, freshly chopped
  • ‘Bacon’, Seitan chopped
  • Bread, everything is truly optional
  • GarlicP/OnionP/SeaSalt/Sugar/Cayenne

Progressive Karate:

  • Saute Onion and Garlic. Boil and season ‘cream’.
  • Cook noodles, leave starch and cool.
  • Add egg replacer, Daiya and Mushrooms.
  • Cook down adding noodles. Serve.

Vegan Zombie Apocolypse

I’ve been a big fan of Jon and his videos from Vegan Zombie since before my even Vegetarian days. I saw their post today of Nacho Cheese and took a watch, yo!

I live in an area where eating out Vegan is almost nonexistent. One, because most (family) restaurants cannot be trusted to be true Vegan. Two, for the buck, it isn’t worth it. Three, I am a damn good cook and love knowing every single ingredient AND quality of every ingredient.

I watched The Vegan Zombie Nacho Cheese video and it’s been the first in awhile that I’ve seen of theirs. I must be moving up a notch in the Vegan world, because I had almost every single ingredient needed to make their Nacho Cheese and to give it my own flair. I just needed some seasonings. That’s all. I did not make yo cheese, but I made me some of that there Nacho Cheese. It was so good! I took the “Z” and gave a “Ⓥ” basically for super Veganism and then turned Apocolypse into more “Nacho” sounding with cheese as cheese. A-nacho-lipso

Ⓥombie Anacholypso ingredients:

  • Cashews, raw or not
  • Walnuts, raw or not
  • Broth, Veggie
  • Cilantro, freshly chopped
  • SeaSalt/Pepper/Paprika
  • ChipotleP/OnionP/GarlicP/TurmericP
  • Peppers (green, red & yellow), roasted and skinned

Mixed in a blender. Served smothering the life out of Tortilla Chips garnished with Cilantro. I also threw some store-bought Salsa Verde on them as well. Went extremely well together.

Props to the Vegan Zombie for being cool, funny and always having great ideas. Recipes are guidelines. Never follow to a “T”.

Plant-Based Protein Sauce

It is time to redeem my prior attempt to blog your arteries of a Vegan meatless sauce with loads of protein. Just like my consumed beers and lack of reviews, I have not measured ingredients except water for my food in so many years. They are not recipes, I guess. I do not wish to tell people how to prepare food, let alone, teach cooking basics. I do wish to influence others to try a plant-based lifestyle and to be creative. I think eating out is extremely overrated. It needs to be a necessity to want to know exactly what is in the food being prepared to keep us healthy and to ensure prosperity.

I am a modest beer snob, who cannot depict every accent or flavor in good beer. I probably never will. I also will not pretend to know. I know good beer from bad beer and that is good enough to me. It is a necessity to me to relax and unwind regularly. I am extremely good at documenting it. And now, I am just kind of (soberly) rambling. I’m overdue for a good bike ride. It was like 10° C yesterday, but I did not have time to make it out. Anyways….

Ⓥaioli ingredients:

  • Wash, reused (Earth Balance ‘Butter’, ‘Milk’, Corn Starch)
  • Garlic, minced
  • ‘Cream Cheese’, Daiya mmmmmmmm
  • Breading, reused (Cashews, SeaSalt, Breadcrumbs, Garlic, Oregano, Parsley)
  • Corn Meal

Mix to a somewhat solid consistency.

Garlic Rye ingredients:

  • Rye, bread
  • ‘Butter’, Earth Balance
  • Parsley, fresh and chopped
  • Garlic, fresh and minced
  • SeaSalt/Pepper/OnionP/GarlicP/Sugar

Heat. Mix. Cool. Spread.

Smashed Potatoes ingredients:

  • Potatoes, red and golden – diced and boiled then strained (time it right)
  • Aioli
  • Basil, fresh and diced
  • Parsley, fresh and diced
  • Oil, Olive
  • Garlic, minced
  • Onion, diced
  • ‘Cream Cheese’, Daiya mmmmm
  • Spinach, to garnish
  • Celery, diced
  • Carrot, diced
  • ‘Milk’, Almond
  • Cashews, SMASHED
  • Brown Sugar
  • Wine, white Vino is great
  • Dill Weed, fresh and chopped
  • Nutritional Yeast
  • Idaho Spuds, instant mashed for concistency assurance

Prep everything and go. Cook Veggies in Oil while boiling Potatoes. Add Wine and cook down and then add everything and crush and smash away. I enjoyed charred store-bought Pretzel Bun with the utter.

Plant-Based Protein Sauce ingredients:

  • Celery, diced
  • Carrot, diced
  • Onion, diced
  • Serrano, seeded and diced
  • Balsamic Vinegar
  • Tofu, extra firm – crumbled
  • Cashew Milk
  • Tomato Puree
  • Chopped Tomatoes, canned with liquid
  • Basil, fresh and diced
  • Parsley, fresh and chopped
  • Brown Sugar
  • Lightlife ‘Sausage’, crumbled or chopped
  • SeaSalt/Pepper/GarlicP/OnionP
  • Mushroom, diced
  • Shallot, diced
  • Garlic, fresh and minced
  • Oregano, dash of dried

Saute Veggies before adding seasonings and sauciness. Cook down for hours:)

Eggplant Ⓥarmesan ingredients:

  • Eggplant, sliced & dried w/ salt
  • Wash (CashewMilk/EarthBalance/CornStarch)
  • Flour/Salt/Pepper/CornMeal
  • Breading (Cashews/Salt/Breadcrumbs/Garlic/Oregano/Parsley)
  • Plant-Based Protein Sauce, heated
  • Linguine, mmmmmmm slightly undercooked-SEASONED
  • Daiya, mmmmmm
  • Parsley & Basil, fresh and chopped or sliced

Flour Eggplant then wash and bread. Bake or pan-fry.

Finish baking Eggplant in Sauce w/ or w/o Daiya.

Build a pasta and garnish.

Ⓥodka Pasta ingredients:

  • Plant-Based Protein Sauce, heated
  • Onion, diced
  • Potato, diced
  • Oil, Olive
  • Almond Milk
  • Daiya, cream cheese
  • Fennel Seed
  • Nutritional Yeast
  • Molasses
  • Idaho Spuds instant mashed, for consistence
  • Ⓥaioli

  • Spinach, sliced
  • Vodka infused w/ Rosemary and Basil
  • Noodles, I had Rotini

Saute Potatoes and Onion in Oil. Add Vodka and cook down

Add all other ingredients and garnish w/ Spinach.

Smashed Ⓥodka Pasta ingredients:

  • Plant-Based Protein Sauce, blended
  • Vodka, infused w/ Rosemary and Basil
  • Garlic, fresh and minced
  • Onion, diced
  • Oil, Olive
  • Smashed Potatoes
  • Tomato Puree
  • Chopped Tomato, canned w/ juice
  • Molasses
  • Rigatoni, undercooked

Saute Potatoes and Onions before adding Infused Vodka. Cook down Vodka. Add Sauces and Tomatoes. Finish cooking Rigatoni in sauce.

Agave Ⓥiesta Nachos

I’ve heard rumors of good true Agave Tequila. I’ve heard it is technically a stimulant and not a depressant like all other alcohols. A bartender told me that once…

I do know with a certain amount of drinks in you, you’re brain is quicker and in a groove. I may have just made that up, but it sounds good to me. All in all, if you’re cooking with alcohol, you need to enjoy some of it while cooking. It is a rule.

Srirsalmic ingredients:

  • Oil, Olive
  • Garlic, fresh and minced
  • Balsamic Vinegar
  • Sriracha, cock sauce
  • Molasses
  • Shallot, diced
  • SeaSalt/Pepper/Oregano
  • Red Wine Vinegar, just a dash
  • Cayanne, a couple dashes

Mix and marinate.

Agave Ⓥiesta ingredients:

  • Rice, cooked
  • Pinto Beans, dry and cooked
  • Cilantro, chopped
  • Lime, juiced and leftover slice for garnish
  • Avocado, chopped
  • Brown Sugar
  • Mushroom, sliced
  • Onion, diced
  • Celery, sliced
  • Carrot, sliced
  • ‘Butter’, Earth Balance mmmm
  • Garlic, fresh and minced
  • Olive, black and pitted
  • Potato, russet and sweet chopped
  • Srirsalmic, mmmmmm
  • Tequila, real w/ Agave
  • Salsa Verde, mmmmmmm

Saute Veggies and add accordingly. I ain’t no teacher, just use common sense.

  • Agave Ⓥiesta
  • Veggie Broth
  • Nutritional Yeast
  • SeaSalt/Pepper
  • Chipotle seasoning, generous 🙂
  • Tortilla Chips, NonGMO Tostitos are great
  • Pico de gallo, I used store-bought
  • Cilantro, freshly chopped
  • Avocado, sliced
  • Lime

Heat Agave Ⓥiesta and broth with seasonings and simmer. Top how you’d like. SO GOOD!
