A Time Science Shorty

I find it entertaining and fascinating attempting trackage of my usage of time over a certain span of time. And this span of time will be from myself falling asleep Friday night May 14th at 10:19 pm (central time) through when I fell asleep Wednesday morning at 12:48 am (central time), creating a span of 98 hours and 30 minutes or 5,910 minutes or 354,600 seconds. It is less than 1% of the time an entire century, but never the less, all time is important. Basically, the time that I am tracking is Saturday May 14th through Tuesday May 17th with a little overhang to even out the sleep.

Out of 98.5 H, I have 92% of my time documented with strong documentation. However, I still want to be above 95%. I will call a 92% over just short of 100 hours of time a C+. There are various excuses for error. I did take a few naps Sunday, recovering from a hellacious Saturday. It very well could be that my guessing estimations are off just a bit. I fully understand that it would be extremely hard to reach 100%, but 95+% is reachable.

I had a conversation, shortly last night, if Netflix or Hulu was better. My response was Apple Music. It pisses me off when it takes me 20 minutes to find something that I kind of want to watch. Little things like that need to be accounted for. I’m gonna have to concentrate on this for my annual June Time Science. Speaking of Apple Music, I have had my first beef (and being Vegan, I extremely despise beef) with Apple Music not having more than one song from an artist who I’d like to check out. YouTube has Apple Music beat on material from the instrumental Post-Rock Canadians, DestroyAllDreamers. It is disappointing that I may have to try and pirate their music in order to add it to playlists.

 Sunday was a day of recuperation and I took four naps and ate so much food. I’m not sure yet of how my Garmin watch does with naps. Naps may need to be documented manually for more accurate documentation. We will see.

I slept 11.2% of the 98.5 hours in a deep sleep of the entire 31% slept. And slept deeply 36% of the 30.3 hours. That averages over 7.5 hours per night and short of an average of 3 hours of deep sleep (or dleep?) per night. Not too bad, if you ask me. Although, last night’s dleep was only 24 freaking minutes. That is interesting. I rode my bike 8.5% of the total time for a distance of just over 175 (108 miles) km with an elevation gain of 826 (2,708 ft) meters. I walked 57.3 (35.6 miles) km over 56,234 steps. I walk much more when I am at work. I ride much more when I am not at work. The art of balance. I also eat more when I am not at work. I burned 30,521 calories over this span and probably only consumed a fraction of those calories burnt. I worked 22.43 hours in two days of the four days. I did not take a break either day.

The rest of the time usually overlaps and needs to be documented better. I spent 1.25 hours shopping. I spent two hours of traveling by machine. My time in a kitchen and also eating was calculated at six hours and also needs better documentation. A total of five hours were totaled for Cubs/Socializing, aka drinking beer outside of the closet:) And the very last thing is a mixture of maintenance (shower/laundry/cleaning/dishes/fixing), internet/blogging and Netflix/movie. I tallied that sum to be 14.5 hours, but is probably more which would help fix the gap. Here is a better overview.

It is rare for me to blend or make sauces/relishes/salsas/etc smooth. I like food chunky flavorful and with character. I love Salsa Verde, but I refuse to make store-bought Salsa Verde. ¿Comprende? I was Mexican, Spanish or Creole in my past life. That style of cooking is explosive with fun and interesting variations.

For months now, I’ve wanted to track my walking. I document everything else in my life, why not track it all. I wouldn’t mind tracking my sleep, also. I’ve attempted sleep-tracking before and it is extremely hard and not so accurate. I somehow brainstormed the idea of getting a FitBit. It was probably a commercial that I saw while watching the kickass Chicago Cubs dominate some other baseball team. And it clicked like a spark igniting a giant fire cracker. I ordered the FitBit Charge large in blue early in the morning on April 25th, 2016. It was a Monday. I was influenced to want to change my order to the HR the moment I realized that they were the same price. I assumed it would be a simple change.

And the ordeal started. The order has been processed and the order could not be changed. The order also could not be canceled. I called hours after placing the order and, I believe, called somewhere overseas. I am just a big idiot and have a wishful and hopeful mindset of how business’ should be ran. I was under the impression that I was calling to the american business, just a building where the FitBit team worked and did all of their business. I’m all about people working and I am all about equality among everyone except St. Louis Cardinals fans (I’m kidding, but seriously). However, these nice people with not the best English probably make a fraction of the average minimum wage here in the United States. And I am against that! Greed is what is WRONG with this world and ultimately the cause of me wanting to move to MARS.

The customer service team did OK. They gave me false promises and lagged any type of fast paced solutions. I had to refuse my package, which wasn’t guaranteed to be refused by the USPS, so I paid to ship it back to make sure it would get back home and to get what I truly want from this company. That is finding a solution to get what I want only because it’s common sense to me and I have initiative to get the product that I want. Otherwise, who knows what would get done or resolved.

I tracked the return and it was delivered by Monday May 2nd, 2016. I called overseas and attempted to speak with a nice lady who spoke below average English. I had to receive an email, only because I called?, to prove that I returned it with a tracking number and all of that good stuff. And no response. I called again and was told that the order was going to be changed to the correct item and shipped out. In the back of me head, from side to side and wrapped fully around my brain smothering the oxygen completely out of my head, I knew something else was going to be a problem. And I received an email stating that I must be issued a refund. I emailed back stating that that was OK. Most of the time when calling the hold time is greater than 10 minutes. I kept checking my barely positive checking account for a refund and did not notice anything. I called after work last night around 8:45 pm and spoke with a very polite gentleman who claimed it needed to be processed through a different department. The company probably handles the funds in the USA, you know because of the greed. I am not seeing a refund today. I’m getting pissed off. I’m gonna tweet them and demand management. Right now I am in a chat demanding management.

Thinking Outside Your Head

By far the best way to get exactly what you want and exactly what you think you get is cooking and preparing food from as scratch as possible. It is the healthiest way to go about life. Unfortunately, it is hard to sometimes fit into routines and it definitely is time consuming. Ever since throwing myself (arms wide open) into the consumption of the Vegan lifestyle, I’ve been constantly reminded of the time and hurdles that take place in this lifelong journey. Not that Vegetarian is any easier. It truly is, being able to eat cheese and dairy. There is not much of a challenge, nor is it truly bettering yourself or the world. Vegetarianism is the start to hopefully enlightened by the sense of what truly matters in this world.

Nothing will benefit life more than what you put into your body. Animal products kill people and murder innocent lives, genocide-style, to feed greed. Nothing is destroying our planet more than the gluttony behind animal consumption, meat and dairy. Good for you for being Vegetarian. I hope all Vegetarians succeed over that hump and obtain that sense of what is going on. I came across this speech with a little help from The Vegan Zombie.

Furthermore, in certain areas it is extremely difficult to live the Vegan lifestyle at a faster pace than cooking all day. I’m sometimes a lazy son of a bitch and when you don’t have motivation to prepare awesome food to refuel, you have to dig deep sometimes, you have to brainstorm, you have to think outside of your head. You can’t always trust what mom & pop restaurants put in their food, but with my experience in mom & pop Italian pizza, I just know that Italian Pizza is made from scratch as cheaply as possible. I’m talking about the dough. I’d put my life on it that all Italian pizza dough consists of flour, salt, yeast, sugar, oil and water.

I have, since being a child, been fighting an addiction. This addiction is impossible to overcome. It is a pizza addiction. Vegan pizza is delicious, but involves preparing. I have been ordering (delivery) Vegan pizza from a ma & pa Italian Restaurant. It is a Veggie pizza without cheese. They’ve never messed up and it is awesome to have that option in my Vegan fuel arsenal. I’ve been dreaming of a Subway option that might actually fill me up. Their Veggie sub, Vegan-style, is delicious, but I need three or four to fill me up. I partook my first Subway adventure yesterday.

Before I forget, I wanna bitch about Netflix. Netflix is occasionally good, but usually bad. The selection sucks and it is dumb with its algorithms to recommend things “smartly” to watch. My favorite movie, Field of Dreams, has never been on Netflix. I recently found an awesome movie away from Netflix completely in American Flyers, also starring Kevin Costner. I have created a joke to myself and cycling about ‘going the distance’.

I hiked down to a Subway and hiked back with my sandwich. It was a footlong on toasted whole wheat bread. This sandwich consisted of just Veggies. It had lettuce, onion, tomato, olives, spinach, jalapeño, cucumber and Love.

Fingerlinging Good

I wish my ten fingers and ten toes were ever-growing Fingerling Potatoes that grew without a sense of feeling just as fingernails and toenails do. Every once in a while a good trimming and consumption is needed in this somewhat twisted fantasy, Jeffrey Fingerling Hands.

I grew up watching Robin Williams in various movies and will always be a fan of his. I named a sauce, Robin Dilliams, in honor of his talents and hilariousness. He also rode bicycles, so it is only right in this snow-blog, shaken vigorously only spraying 2016 Chicago Cubs champagne bubbles everywhere instead of false snow inside, world I have created.

Robin Dilliams ingredients:

  • ‘Butter’, Earth Balance
  • Dill Weed, chopped
  • Sriracha, cock sauce
  • Lemon, juices – no seeds, no stems
  • Pizza sauce, or tomato sauce
  • Corn Starch, for consistency
  • SeaSalt/Pepper/BrownSugar

Heat, mix and love.

Rice ingredients:

  • Basmati Rice
  • Split Peas, green
  • Carrot, diced
  • BayLeaves/BrownSugar/SeaSalt/Pepper

Cook.

  • ‘Butter’, Earth Balance
  • Tofu, extra firmly crumbled
  • Parsley, chopped

Mix.

I rode to the store on my muddy Trek Darth Vader for Tomatoes. It looks more like Spring, it was just super chilly today.

Fingerlinging Good ingredients:

  • Robin Dilliams, heated
  • Rice, heated w/ Bay Leaves removed
  • Spinach, sliced
  • Dill, chopped and a nice looking branch for garnish
  • Oil, just a little
  • Garlic, sliced
  • Cashew, whole & raw
  • Fingerling Potatoes, red and golden
  • Lemon, juices no seeds nor stems
  • Sriracha/BalsamicVinegar

Sauté, strongly with Lemon/Sriracha/Balsamic added towards the end.

  • Tomatoes, red and yellow cherry/grape
  • SeaSalt/Pepper/OnionP/GarlicP

Add ingredients and season while simmering for a bit.

I constructed a Plant-Based amphitheater of flavorful texture where flavor battles texture in an exploding cherry tomato eruption of plant genocide fury. Battles which heighten senses in a disarray as intense as a LSD high might.

The foundation started with sliced Spinach and quickly to anchor the butchered Spinach was the damp Tofunated Rice embedded with Split Peas and Carrot still wet with Earth Balance.

I constructed the domed roof with massive blackened Fingerling Potatoes creating a solidly unbreakable structure and some lovely decor of Cherry Tomatoes to help the spectators feel at home.

The wonderful infrastructure is finished and held together with Cashews and Garlic. No amazing accomplishment is final without splashing a little color and a flag to truly represent what this all means. Robin Dilliams covered roof and exterior pillars stand tall with an enormous flag flapping in the gusty breeze at the very top symbolizing non other than Dill.

As I do not have anyone ever reading these, it is a better way of organizing ideas and hopefully one day I’ll influence someone to go Vegetarian, Vegan or just to cook for themselves.

I bought new wheels for my (bicycle) Trek Darth Vader, hence low budget Veganism. Don’t get me started with these wheels. They have already been returned for a wheelset that’ll work for me better. Anyways….

LBⓋ 13/10 Lentili ‘Cheese’ Fries ingredients:

  • Daiya, block ‘cheddar’ – chopped (7) @ $5.98 = $0.85 per serving
  • Fries, frozen & roasted (9) @ $2.98 = $0.33 per serving
  • Lentil, canned soup – simmered (2) @ $1.50 = $0.75 per serving
  • Sriracha (96) @ $2.97 = $0.04 per serving
  • Seasonings (GarlicP/OnionP/BrownSugar/LiquidSmoke/SeaSalt/ Pepper/CornStarch) @ $0.07 per serving
  • Broth, Veggie (4) @ $1.99 = $0.25 per serving

Ready….GO:

  • Heat Lentil Soup/Veggie Broth and simmer. Heat VeggieBroth/Seasonings/Daiya/Sriracha and simmer.
  • Control consistency with CornStarch/Broth.

This would’ve been made cheaper and better from-scratch, unfortunately time was not on my side and this dude was hungry. And at $2.29 per serving this cheaply and timely produces 3-5 hearty servings and is a healthier comfort food. To be remastered….

My mother, the wonderful angel she is, made Vegan Chili for me the other night. It was nothing spectacular other than her kindness and simplistically comforting Chili flavor. I decided to try out block Daiya for the first time and prepare Chili ‘Cheese’ ‘Steak’ Fries. I also included a Chili recipe within my Low Budget Ⓥegan concept.

Last night I purchased a used, but basically new FAT BIKE as most components were not used except for wheels and frame. It has been nicknamed Arrogant Bastard.

I often come across things on Netflix that are popular and OK, but not very good in my opinion. I sometimes continue to watch them because hunting for something you feel like watching is the entirety of the battle. And then I came across this and the war has been victorious!

  • Celery, diced (13) @ $0.39 = $0.03 per serving

Approach: 

  • I decided to cut out the use of any Oil for this Recipe.
  • I pre cooked Beans together for 60-75 minutes.
  • I chopped all Veggies and strained Beans and Corn.
  • Add Tomatoes and Paste. Fill Paste cans with Veggie Broth and add all ingredients with remaining Broth.
  • Add Pasty Broth and Season
  • Bring to boil, cover, simmer and periodically stir
  • GO FOR A FAT BIKE RIDE IN THE WET AND COLD AND COME BACK AND ENJOY!

It may be a bit deceiving at a whopping $2.74 per serving for this Chili, but the amount of serving are plentiful.

  • Grill Potatoes
  • Slice Spinach and Daiya from block
  • Place Potatoes on plate and bake with heated Chili and Daiya.

EZ Chinesey II

In the past, before my Veganism, before my Vegetarianism, I was somehow convinced there was an unwritten rule that only certain foods were acceptable to eat in the morning. I tell ya what…. Chinese food at 0930 is the freaking way to start a day.

A theory I’ve been toying around with for a while is that my tastebuds are still and have already evolved. Brussels Sprouts, Thanksgiving and I have a fairly new, yet repetitive, history. In 2011 on Thanksgiving, I attempted consumption of Brussels Sprouts and was completely disgusted and quickly forced the vegetable out of my mouth.

In January 2013, I became a full-on Vegetarian and my life has never and will never be the same. I’ve toyed around with Vegetarianism before 2013, but finally pulled the trigger after viewing VEGUCATED on Netflix. Which to this day, is still on Netflix. And, honestly, Vegucated influenced my push to have a Vegan lifestyle.

On Thanksgiving 2014, I prepared two dishes of brussels sprouts. The one was carnivorous and the other was herbivorous. I did not eat any of the dish with pig flesh. The meatless dish did involve dairy, but gave me a new love for Brussels Sprouts. I now love various different vegetables that I used to despise, ultimately proving my theory of palate evolution.

Low Budget Ⓥegan EZ Chinesey II:

  • Ramen Noodles (non-Ⓥegan seasoning packet discarded) (24) @ $2.18 = $0.10 per serving
  • Brussels Sprouts, oven-roasted face down (9) @ $2.68 = $0.30 per serving
  • Salt/Pepper/OnionP/GarlicP = $0.05 per serving
  • Sesame Oil (10) @ $3.48 = $0.35 per serving

Roast the brussels sprouts. In the meantime, slightly undercook Noodles and strain. Wipe out any remaining water in the pan. Put on low heat and Add Sesame Oil, Sriracha, Balsamic and Noodles. Add Seasonings and Brussels Sprouts. Add Soy Sauce and stir generously. At $1.01 per serving, this is extremely affordable and even more extremely delicious.

My sister asked me to make Brussels Sprouts for this years Thanksgiving. It will be an epic Jurassic battle between the Herbivorous and carnivorous Brussels Sprouts as I’ll be preparing both unless I just go with the delicious Ⓥ Brussels Sprouts all together. 🙂

Back Burner Ragu Marinara ingredients:

  • Celery, finely diced
  • Carrot, finely diced
  • Onion, finely diced
  • Garlic, diced
  • Balsamic Vinegar
  • Veggie Broth
  • Tomato Paste
  • Chopped Tomatoes, canned or fresh (deseeded)
  • Sugar/SeaSalt/Pepper/Cayenne/GarlicP/OnionP

  

Steps:

  • Cook Garlic, Celery, Onion & Carrot before adding everything else.
  • Simmer for hours, stirring.
  • I used Brown Sugar this time and I put a splash of Liquid Smoke

I decided to cancel my plans on making Seitan ‘Parmesan’ in order to ride a Gran Fondo on my only day off in the last week. At times, I have been motivated to suffer through various rides. One, to make me stronger and two, to deplete any frustrations and stress life can bring. This stress killer was a ride with 20-35 km/h headwind. I chose to turn my Back Burner Ragu Marinara into a soup.

Creating things that are versatile keeps you on your toes and free to motivate your imagination in the kitchen. Just like recipes, plans do not have to be kept and should be open for changes and involve freedom.

  
Roasted Ⓥeggie Soup ingredients:

  • Back Burner Ragu Marinara, simmering
  • Cashew Milk
  • Tofu, soft
  • Eggplant, chopped
  • Potato, chopped
  • Cauliflower, chopped
  • Green Pepper, diced
  • Asparagus, chopped
  • Tomato, chopped
  • Celery, chopped
  • Mushroom, sliced
  • Onion, diced
  • Sugar/SeaSalt/Pepper/GarlicP/OnionP
  • Nutritional Yeast

   

 High Dive Double Backflip:

  • Roast Veggies to desired doneness.
  • Add Tofu & Mushrooms towards the end of desired doneness, or not.
  • Simmer Cashew Milk with seasonings while Veggies are roasting.
  • Add roasted greatness to Sauce and enjoy 🙂

Last night I spontaneously decided to make pasta from my Soup. And also decided and brainstormed Ⓥeatballs. The last time I made meatless ‘meatballs’, I was not even Vegetarian yet. I took a different approach and had fun with the idea. The results were very rewarding and extremely tasty.

  
Ⓥeatballs ingredients:

  • Fennel Seeds, roasted
  • Eggplant, roasted & diced
  • Garlic, minced
  • Raw Cashew, pulverized
  • Raw Almonds, pulverized w/ skin
  • LightLife, ‘beef’ & ‘sausage’ – diced
  • Bread Crumbs, plain
  • Corn Meal
  • Vital Wheat Gluten, not too much
  • Idaho Spuds Instant Mashed, classic
  • Cashew Milk
  • NutritionalYeast/Sugar/Cayenne
  • GarlicP/OnionP/Turmeric/Thyme/Oregano
  • SeaSalt/Pepper

 Cannon Balls:

  • Roast Fennel Seeds and Eggplant together and cool slightly before dicing.
  • Start mixing dry ingredients first before wet and more wet ingredients just to ease my anal-ness.
  • I decided to add Vital Wheat Gluten last just because I was unsure of how it would mix. I added a bit at a time while mixing with one hand until I found my ideal consistency.
  • Form into balls and bake before broiling to finish with some color and char flavor.

  

Pasta ingredients Ⓥ:

  • Bow Tie noodles, cooked entirely in Sauce
  • Roasted Ⓥeggie Soup, simmering
  • Spinach, sliced like Basil
  • Ⓥeatballs, fresh out of oven 🙂

  

Snow Angels:

  • Make sure noodles have cooked in sauce.
  • Add sliced Spinach.
  • Plate Pasta with Ⓥeatball.
  • Enjoy a beer and be happy:)
