The basis of this concept is the Sauce. Call it an accident. Call it Evolution. Perhaps, experience and stubbornness played a bigger role. Whatever ya wanna call it, this sauce is versatile and damn delicious.

It started as Vegetable Stew. A big pot of Intense flavor simmered and cooked down longer to infuse the flavors like the construction of a new galaxy over 100’s of billions of years, just at a much smaller time frame. Veggie Broth, Pinto & Northern Beans, Potato, Carrot, Celery, Asparagus, Brussel’s Sprouts, Tomato Paste, Onion, Garlic, SeaSalt/Pepper and Pineapple Juice were thrown into the pot. The taste was amazing, I just wasn’t pleased with the texture.

The Stew stayed in the refrigerator for a couple of days before I decided to blend the entire pot down to much more of a smooth Soup. Daiya was added as I allowed the Soup to cook-down for a strong fraction of a day. Various styles of consumptions followed.

Today, I used the last of it. Green, Yellow, Red & Orange Peppers were sautéed with Garlic, Onion, Portabella Mushroom and Seitan. Seasoned with RiceVinegar/CrushedRedPepper/ SeaSalt&Pepper, this stir-fry gave me the mouth-watering chills just from the visuals and aroma.

Linguine was cooked al dente and not rinsed and immediately thrown into warmed Sauce. I grilled some Bread to serve dry with this Pasta. Plated the noodles with stir-fry greatness ontop. No garnish needed.

Daiya Squashed Spuds

I squashed the spuds and ate some veggies like they were already extinct. I boiled Potato slices and Carrot cylinders while eventually dry roasting yellow and Zucchini Squash. I used Oregano/SeaSalt/Pepper to season with Grape Tomatoes, Onion, Daiya and Slices Spinach. I garnished with Marinara marinated Squash and sliced Spinach. I drank beer and loved this one.

It’s nice to go for a muddy bike ride with others to a local brewery to enjoy a freshly brewed Craft Beer and for the first time, I could eat a sausage with them who were also enjoying sausages. They carried Field Roast sausages:) you betcha, I want that Chicago-style.

I purchased a mandolin and love using it for food prep. I sliced Potatoes and dry-roasted them. In the meantime, I made a Roux -heating Earth Balance and mixing in flour. I then added chopped Avocado and extra firmly crumbled Tofu. I drowned the Roux with SoyMilk and seasoned with ChipotleP/Cayenne/Sugar/Pepper/SeaSalt/DillWeed&GarlicP. I let simmer before adding chopped Kale, Daiya and sliced Seican (Seitan Bacon).

You’ll never truly know what works and what doesn’t work without experimental trial and error cheffing. Spontaneity usually works best for me while hunger motivates me to ponder in the back of my mind like a pinball machine bouncing ideas of mixing ingredients with other ingredients. Do I want to cook my ingredients? Which technique do I use to cook my ingredients? Or do I not cook some or all ingredients? What haven’t I done yet? Do I need to remaster an existing idea and attempt?

Having a beer or two helps creativeness continuously flowing and going away from that game ending drain. If it turns out great, I’ll take a few pictures and blog about it. First, I’ll have a little fun with a photo.

I sliced Eggplant and roasted the slices. I smeared Daiya ‘cream cheese’ and torn Daiya ‘cheese’ slice on the roasted Eggplant and warmed in the oven. Out of the oven, I sprinkled a bit of Chipotle Powder on top and put a Caper underneath a sliced Tomato. Then I broiled slightly before adding some Oregano and SeaSalt. Deliciously easily edible.

I unfortunately do not make time to dabble in the art of making fresh dough these days, so for this recipe I used Mama Mary’s (Ⓥegan) pizza dough. It is excellent and gives you (me) endless pizza construction possibilities.

I mixed Thai Peanut Sauce with Tamari and Sriracha for my pizza sauce.

I stir-fried Garlic, Sunflower Seeds, Carrot, Celery, Onion, Cabbage, Mushroom and chopped Daiya (Havarti Jalepeno) with Wok Me Up Garlic Stir Fry (chopped Tofu and the (Ⓥegan) Sauce).

Smothering the already prepared pizza dough with the Peanut Sauce, I then put a few slices of Swiss Daiya ‘cheese’ before adding the StirⓋry to be slow roasted in the oven at 250 F for 20 ish minutes. I broiled slightly.

I made some Brown Rice to consume with the remaining StirⓋry.

Tofupeh Rangoon

I pictured these jumbo Tofupeh Rangoon turning out just a little bit better, visual-wise. The wonton wraps like to flop around, limply. And that is why the smaller wonton wraps are commonly used. All in all, they were still extremely deliciously edible.

My Sourly Sweet Sauce consisted of:

  • Pineapple Juice
  • Molasses
  • Rice Vinegar
  • Balsamic Vinegar
  • Tamari
  • SeaSalt
  • Cayenne
  • Garlic Powder
  • Corn Starch

The amazingly delicious Tofupeh:

  • Tempeh, diced
  • Tofu, extra firmly crumbled
  • Wasabi Powder
  • Tamari
  • Balsamic Vinegar
  • Thai Style Peanut Sauce
  • Daiya Cream Cheese
  • Daiya Jalapeno Havarti Cheese, diced
  • Scallions, chopped
  • SeaSalt/Pepper/GarlicP/Sugar/DillWeed

Basically, just pan-fried Tempeh and Tofu in oil before adding everything else.

I used Sugar/Water/Mollasses for Wonton adhesive. I baked the Rangoon on low heat.

The Wonton wraps contain less than 2% egg. I’d say this recipe is 99.5% Vegan.

Baked Tortellini

I’ve mentioned in previusly unread blogs, that I do not wish to continue being a stickler about minute (mynoot) amount of dairy or egg. I will probably never purchase cheese nor egg themselves ever again in my life.

I used Wonton wraps today that included less than 2% of egg.

Thus, I’ve been saying for a few weeks, I am 98% Vegan. The other day a coworker/friend offered me a cookie. She is Vegetarian and warned me that they consisted of a little egg. I thanked her for the information and consumed one delicious cookie. Stress kills and it’s not a good feeling to be excited for consumable food only to find out it conflicts with your lifestyle. I am keeping a small window open and that is truly up to me.

  • Heat Veggie Broth
  • Throw in (from a decent distance) Celery, Baby Carrot, Onion & Bay Leaves
  • Season with Basil, SeaSalt, Pepper, Sugar, BalsamicVinegar&GarlicPowder
  • Simmer down now
  • I thickened this Broth with InstantMashedPotatoes

I will not buy eggs. I will not physically cook with them. I mixed Sugar with Water to create an edible adhesive.
