I do not intend to be extremely repetitive, but I love sandwiches. And finding fun ways to include sandwiches into my (Ⓥegan) lifestyle, is one of my keys to happiness.

And if you can healthily happily eat, you might as well step it up a notch or two and eat Vegetarian or Vegan to ultimately do an enormous part in saving the planet.

I am not one to follow much of what takes place in the movie industry these days, but it’s impossible nowadays to ignore it. When news involves Leonardo DiCaprio, I’ll listen as Leo and I go way back to when I saw Titanic in theater at age 12, I believe. Since then, he’s truly been a favorite actor of mine. Being a true environmental activist is greater than (>) his amazing acting career and is how people with power/fame should go above themselves to try and make a true difference.

I made a good amount of (ben) Meatlessburger happiness. (The QB for the Pittsburgh Steelers is Ben Roethlisberger:). A brewery that I’ve come across with a few different beers is Half Acre out of Chicago, IL. I did not visit the Brewery (yet), just picked up a few 4-packs. I enjoyed their Pale Ale, their IPA and their Black/Dark Ale. They were all in 16 oz. cans with great decorative properties and the stuff inside is good, as well.

As far as the Meatlessburger goes, I made a gyro-style sandwich, a USA-style sandwich and an experimental chinese-style bunless Meatlessburger. And a LBⓋ (Low Budget Vegan) side… 🙂

Ⓥzatziki Sauce ingredients:

  • Non-dairy yogurt, plain
  • Lemon, freshly juiced
  • Cucumber, deseeded and diced
  • Cumin powder
  • Garlic, freshly minced
  • SeaSalt/Pepper/BrownSugar
  • Sriracha
  • Onion, diced

Mix. And Enjoy.

  • Lightlife ‘sausage’ and ‘beef’, crumbled
  • Daiya Cheddar, block diced cubes
  • Garlic, freshly minced

Prep. Mix. And enjoy. Add Corn Starch if needed.

Spaghetti Carbonara

Most of the time, something truly artery clogging usually murderous involving animals is excuse and motivation for my blog clogging Vegan food ideas. Meat is murder. Cheese and dairy is animal torture. I recently made Vegan Spaghetti Carbonara.

Yesterday, I enjoyed something called Jesus Toast. I rode through wet and super soft mud/gravel to get to this toast. Only to later realize this Jesus Toast was created by a SIUC Saluki alum. And this Jesus Toast is not your traditional food. Food to me, but a craft beer from Hailstorm Brewing Company out of Tinley Park, IL. The beer is a black rye IPA and very decent. The name is unique and entertaining alone. Made from a Saluki alum is a cherry on top. I also enjoyed an Alabama Hot Tub by Hailstorm.

Saturday, I rode my heart out along a multi-surfaced Gran Fondo of 100+ KMs. I set a most ascent record with my Garmin Edge 1000 with an ascent of 592 meters aka just short of 2,000 feet. It was an asskicker.

Spaghetti Carbonara ingredients:

  • Spaghetti, whole wheat & cooked not rinsed
  • Onion, diced
  • Garlic, freshly minced
  • Mushroom, sliced
  • ‘Milk’, rice, soy or cashew non-dairy
  • Egg replacer
  • Pepper, coarse
  • Tempeh, grilled
  • Daiya
  • Nutritional Yeast
  • Parsley, freshly chopped
  • ‘Bacon’, Seitan chopped
  • Bread, everything is truly optional
  • GarlicP/OnionP/SeaSalt/Sugar/Cayenne

Progressive Karate:

  • Saute Onion and Garlic. Boil and season ‘cream’.
  • Cook noodles, leave starch and cool.
  • Add egg replacer, Daiya and Mushrooms.
  • Cook down adding noodles. Serve.

I’ve blogged it before and I’ll blog it again. Improv cooking sometimes allows truly great ideas to flourish. And having fun with your food is unreal, interesting and extremely entertaining. Perhaps, not always a success, but worth it most of the time.

From time to time, I do not wanna go to the grocery store. And that alone (maybe a beer or two, also) is my spontaneous/improvisational motivation. Cook and create with what you have on hand. I have strong belief that in a prior life, I was a Mexican chef. Furthermore, I always non-subconsciously almost hoard Mexican cuisine ingredients. A past life is the only way that I can explain it.

I’ve had some good beers in the last weeks. I had enjoyed my first ever Hopslam on draft. I’ve had it in bottle before, which is great. The preservation and balance in keg is unbelievable. Hopslam is made out of Bell’s Brewing in Galesburg, MI. It is a DIPA (double india pale ale) made with honey. FIND IT. ENJOY IT.

Seitan ingredients:

  • Vital Wheat Gluten
  • Corn Meal
  • Rosemary/Cayenne/FennelSeed, crushed together
  • Tomato Sauce
  • Veggie Broth
  • Turmeric/Thyme/SeaSalt/Pepper/GarlicP/OnionP
  • Bay Leaves/Celery/Peppercorn/Fennel/Rosemary, for baking
  • Vegan ‘Cheese’ cloth

Domino Effect:

  • Mix wet ingredients together and dry ingredients separately before mixing together.
  • Form into a loaf and put into wet ‘cheese’ cloth.
  • Put Seitan loaf into Lasagna pan and put Herbs/Veggies with Broth filling halfway.
  • Bake for two hours, flipping loaf in between.
  • Remove from cloth immediately and put in foil or use.
  • I broiled slightly after out of ‘cheese’ cloth.

In West Philadelphia born and raised, On the playground is where I spent most of my days. I am kidding. I was born in Denver, CO. However the playground situation is true as long as riding a bike and swimming counts, also. I did also grow up watching and idolizing John Elway, the amazing QB for the Denver Broncos between 1983-1999. The reason why number seven is my favorite and why my signature puposely contains a “7” is because of that man. And this Super Bowl, John gave Denver their third SB victory being the Denver Broncos GM and true Sheriff. I was happy to see Peyton Manning win. I was, however, more excited to feast on all kinds of VEGAN FOOD.

In the first quarter I had Nachos basically as an appetizer. And in the second quarter I enjoyed Potatoes. The third quarter I turned it up just a notch with baked beans. And nothing makes sports more enjoyable (other than beverages) than the ultimate comfort-food, the hot dog. I did pair all of these Vegan courses with different IPAs. I am not sure it could’ve been any better.

The commercials were mostly bad and at times, extremely mad. There was one about how much water you could save while brushing your teeth, although nothing about the amounts of water it takes to produce this worlds disgusting carnivorous habits. There was one for Heinz ketchup and mustard. And it involved “weiner” dogs running with hot dog buns as floaties. These dogs were supposed to be eaten by someone, I’m assuming. Also, Veggie or meat, no dawgs should be eaten with ketchup. Peyton Manning plugged for Budweiser. I later learned that he owns a brewery somewhere.

Mixed in a blender. Served smothering the life out of Tortilla Chips garnished with Cilantro. I also threw some store-bought Salsa Verde on them as well. Went extremely well together.

Sweet Potatoes ingredients:

  • Sweet Potatoes, skin on and diced
  • Celery, diced
  • Onion, diced

  • Oil
  • Earth Balance, add later & garnish

  • Lentils, dry
  • Guts, non-animal, but utilize Tomato and Cucumber
  • Dill, freshly chopped & add later

Saute Celery, Onion, Carrot in Oil before adding Seitan, Sweet Potatoes & Tofu to saute & steam by stirring occasionally and covering inbetween on medium-high heat. Add Broth, Lentils and seasonings except the “add later” and simmer, covered. Add “add later”s and serve soon after and garnish with Earth Balance.

Ⓥaked Ⓥeans ingredients:

  • Beans, dry & Northern
  • Garlic, fresh & minced
  • Corn, I used canned
  • Celery, diced
  • Onion, diced
  • Carrot, diced
  • Tofu, crumbles

  • Tomatoes, canned chopped w/ juice
  • Cilantro, freshly chopped
  • Seitan, sliced & charred
  • Broth, Veggie
  • LiquidSmoke/BalsamicVinegar/Sriracha
  • SeaSalt/Pepper/BrownSugar

Mix together and BAKE. I baked @ 305° for 3+ hours while covered and rode a bicyclt outside.

Plant-Based Protein Sauce

It is time to redeem my prior attempt to blog your arteries of a Vegan meatless sauce with loads of protein. Just like my consumed beers and lack of reviews, I have not measured ingredients except water for my food in so many years. They are not recipes, I guess. I do not wish to tell people how to prepare food, let alone, teach cooking basics. I do wish to influence others to try a plant-based lifestyle and to be creative. I think eating out is extremely overrated. It needs to be a necessity to want to know exactly what is in the food being prepared to keep us healthy and to ensure prosperity.

I am a modest beer snob, who cannot depict every accent or flavor in good beer. I probably never will. I also will not pretend to know. I know good beer from bad beer and that is good enough to me. It is a necessity to me to relax and unwind regularly. I am extremely good at documenting it. And now, I am just kind of (soberly) rambling. I’m overdue for a good bike ride. It was like 10° C yesterday, but I did not have time to make it out. Anyways….

Ⓥaioli ingredients:

  • Wash, reused (Earth Balance ‘Butter’, ‘Milk’, Corn Starch)
  • Garlic, minced
  • ‘Cream Cheese’, Daiya mmmmmmmm

  • Corn Meal

Mix to a somewhat solid consistency.

Garlic Rye ingredients:

  • Rye, bread
  • ‘Butter’, Earth Balance
  • Parsley, fresh and chopped
  • Garlic, fresh and minced
  • SeaSalt/Pepper/OnionP/GarlicP/Sugar

Heat. Mix. Cool. Spread.

Smashed Potatoes ingredients:

  • Potatoes, red and golden – diced and boiled then strained (time it right)
  • Aioli
  • Basil, fresh and diced
  • Parsley, fresh and diced
  • Oil, Olive
  • Garlic, minced
  • Onion, diced
  • ‘Cream Cheese’, Daiya mmmmm
  • Spinach, to garnish
  • Celery, diced
  • Carrot, diced
  • ‘Milk’, Almond
  • Cashews, SMASHED
  • Brown Sugar
  • Wine, white Vino is great
  • Dill Weed, fresh and chopped
  • Nutritional Yeast
  • Idaho Spuds, instant mashed for concistency assurance

Prep everything and go. Cook Veggies in Oil while boiling Potatoes. Add Wine and cook down and then add everything and crush and smash away. I enjoyed charred store-bought Pretzel Bun with the utter.

  • Onion, diced
  • Serrano, seeded and diced
  • Balsamic Vinegar
  • Tofu, extra firm – crumbled
  • Cashew Milk
  • Tomato Puree
  • Chopped Tomatoes, canned with liquid
  • Basil, fresh and diced
  • Parsley, fresh and chopped
  • Brown Sugar
  • Lightlife ‘Sausage’, crumbled or chopped
  • SeaSalt/Pepper/GarlicP/OnionP
  • Mushroom, diced
  • Shallot, diced
  • Garlic, fresh and minced
  • Oregano, dash of dried

Saute Veggies before adding seasonings and sauciness. Cook down for hours:)

Eggplant Ⓥarmesan ingredients:

  • Eggplant, sliced & dried w/ salt
  • Wash (CashewMilk/EarthBalance/CornStarch)
  • Flour/Salt/Pepper/CornMeal
  • Breading (Cashews/Salt/Breadcrumbs/Garlic/Oregano/Parsley)
  • Plant-Based Protein Sauce, heated
  • Linguine, mmmmmmm slightly undercooked-SEASONED
  • Daiya, mmmmmm
  • Parsley & Basil, fresh and chopped or sliced

Flour Eggplant then wash and bread. Bake or pan-fry.

Finish baking Eggplant in Sauce w/ or w/o Daiya.

Build a pasta and garnish.

Ⓥodka Pasta ingredients:

  • Plant-Based Protein Sauce, heated
  • Onion, diced
  • Potato, diced
  • Oil, Olive
  • Almond Milk
  • Daiya, cream cheese
  • Fennel Seed
  • Nutritional Yeast
  • Molasses
  • Idaho Spuds instant mashed, for consistence
  • Ⓥaioli

  • Spinach, sliced
  • Vodka infused w/ Rosemary and Basil
  • Noodles, I had Rotini

Saute Potatoes and Onion in Oil. Add Vodka and cook down

Add all other ingredients and garnish w/ Spinach.

Smashed Ⓥodka Pasta ingredients:

  • Plant-Based Protein Sauce, blended
  • Vodka, infused w/ Rosemary and Basil
  • Garlic, fresh and minced
  • Onion, diced
  • Oil, Olive
  • Smashed Potatoes
  • Tomato Puree
  • Chopped Tomato, canned w/ juice
  • Molasses
  • Rigatoni, undercooked

Saute Potatoes and Onions before adding Infused Vodka. Cook down Vodka. Add Sauces and Tomatoes. Finish cooking Rigatoni in sauce.

Vegan Smashed Potatoes

We all grow up differently. We all make different, but similar mistakes. We all do our best improving our lives. Some are better at doing that than others. With different obstacles, we do our damn best and sometimes it is not appreciated enough. All in all, we all care for our loved ones and passions & hobbies.

I grew up being a fan of a band, Soulfly, a newer age metal band involving spirituality and tribal aspects. Last night I was messing around with #AppleMusic and somehow wound up with Sepultura which made me wonder what the hell Soulfly was up to as the lead singer for Soulfly helped found Sepultura.

Now, I love me some of that there loud and fast metal, but I grew a stronger connection with Soulfly because of their ability to turn it down a notch and still be extremely awesome. I’m gonna take a guess and say that the last time that I bought a physical Soulfly CD was 2005-2006. I, however, made a playlist circa 2010 of their instrumental collection of songs literally named Soulfly. A concept that I love and every album has Soulfly 2, 3, 4, 5, 6, 7, 8, 9, 10 only in Roman numerals. I only had 1-5 until last night! Thank you Apple Music! And since I remember anything, the number seven has been my favorite due to watching John Elway sling those footballs growing up. Soulfly VII is now my favorite and it’s fate. I am obligated to share this playlist and I wish everyone on the planet Earth (and Mars:) could experience this playlist.

Along with this beautiful playlist, I’ve organized a beautiful moment that I have experienced in 2013. August 5th, 2013, to be exact. I often talk to animals while riding by and often take pictures and occasionally say “you’re all gonna die” or “I don’t eat you!”. I feel bad when I let them know their doom, but it is the cruel truth. This is when I had my iPhone on my handlebars with Lifeproof technology where it was easy to take photos while moving. I rode with a running herd of cattle like a damned cowboy. I’d like to think this was their idea of saying thank you for giving up meat that January.

Old Man Winter

Not everyone has experienced a Northern Illinois winter, let alone ride bicycles in Northern Illinois winter weather. The hardest part of winter cycling is being comfortable with freezing winds, ice, snow and bears – oh my. I will say it is easier to remain comfortable in super cold or warm climates. The 2-10 degree Celcius range is tricky and is best suited with removable and addable layers.

Riding a FatBike is basically a moving furnace conducting your own heat or a steam locomotive with the streaming trailing line of hot steam in a dissolving midst. And your central body is often warm and comfortable as long as you let the steam escape while still staying insulated. Fingers and toes are often the first to get uncomfortably cold.

Booze helps a bit, but proper gear is a must. I, for the first time, was completely comfortable on a time tenured sub-freezing ride with an average temp of 10° in 120 elapsed minutes.

I’ve known for some time that Thinsulate was an outstanding winter ally and I finally have amazing gear to truly backup my cycling nonsense and babblings. Here we go!

The shoes were outstanding for two hours and the same goes for the gloves. I am contemplating a Gran Fondo this weekend. On a FatBike it’s gonna consume a good 7-8 hours. It may be a little warmer, but we will see.

2016 Ride II

Just to let the imaginary people whom I pretend read my (plant-based) chicken scratch (blogs), I do not plan on publishing per ride. I just had quite an interesting ride yesterday. And it was only my second ride this year.

Bluntly, winter cycling is a bitch. Especially, in Illinois along with many other cold and windy areas. I’ve ordered Bontrager OMW (Old Man Winter) shoes that are insulated and waterproof in December. And after my order, my bike doc called me and let me know that they are sold out until February. Since making the switch to clipless, I’ve been just dealing with the cold.

I met a (hired and well compensated) friend to ride fat bikes in hope it was going to snow like hell. I utilize the I&M Canal in the winter almost every ride. It has been flooded the past month at Lock 14, the LaSalle entrance. Long story short, I noticed it was not under water and took the driving entrance where I encountered a thin, super wet layer of ice where I biffed it HARD. I hit my head. I was wearing a helmet, luckily. I got up and continued. It was raining and I got soaked before I called it quits and retired for the day-ignoring the eventual snow.

I changed and left my socks on a good five minutes longer before changing them where I then experienced one of the worst and uncomfortable sensations ever. It was as if microscopic flesh eaters were eating my feet. They were bright red and itchy. I tried washing my feet. I tried lotion and I HATE lotion. I even jumped into the bathtub to wash my feet. It lasted a good half hour and then went away. I tried digging up an explanation. I found this..

I group texted my cycling buddies and asked for their input. And they mentioned that it sounded like a beginning stage of frostbite which I believe is frost nip, technically. I never want to experience that sensation ever again. And I wouldn’t wish it on my worst enemy. Always wear a helmet and dress accordingly!

First 2016 Cycling Ride

I’ve been working super hard lately. Too hard, maybe. It was well above freezing today in January in Northern Illinois. Obviously El Nino makes a difference. Our climate change won’t be this drastic anytime soon. But, I am not the scientist. Just an asshole who likes bicycles, adventure and good beers. Dealing with a cold and floods, I just rode on! Grind them gears and just go and do anything you can to prevail. #RideOn

I did ride, met a cool lady with a cool female dog, got wet and just rode the FatBike. Very successful Friday.
