We experience. We learn. We adapt. We evolve into preparing ourselves to react better the next time around. We are human. I’ve been enjoying kickass music and kickass Beer lately. So much, that I wanna shout on top of the tallest mountains of how euphoric the combination is. This combination is not recommended to consume responsibly unless that’s how you feel. Do how you feel. Feel as you do. I’m a bossy SOB, but whatevs.

SUNLIGHT ASCENDING is instrumental Post-Rock that sounds different between tunes. And that is unique and just awesome. Hoppin’ Frog is a brewery out of Ohio. The beers I’ve had are spectacular.

At times, you just gotta kickback, make killer food and enjoy adult beverages recklessly responsibly to forget a debt of intensity stowed upon one simply effortlessly living hard and working hard on a rare twelve hour shift. Perception is everything. Lets recap a wild date with Tofurky C H O R I Z O style.

Whiteout Chili MacNDaiya

I’m a lazy ass usually. I used dough in a can. It’s good, quick and easy. Earth Balance ‘butter’ was used to ‘butter’ my pan followed by the unleashed dough. Whiteout Chili MacNDaiya engulfed the center of that panned dough and was baked slowly. Wrapped in aluminum foil, I stored this beauty in the fridge for a later day.

I unwrapped my panned greatness and turned the oven on low. Like 225 degrees low. Daiya, yellow and white, were combined with crumbled Cauliflower to top this animal-product-less BEAST.

Evolution of recipes is the greatest thing ever. Don’t let it die until it’s dead. Please, don’t kill anything. Plants must die. And that is all.

VEGAN Garlic Hawaiian Pizza

I will always be a pizza addict, I know. Once diagnosed, you have that illness for life. One thing about my disease is that I do not rely on animal torture and murder to get my fix on. I do, however, rely on plant genocide and slaughter to get my pizza fix. And I get off on the plants pain and torment. Perhaps, a psychopath. Perhaps, just a pizza addict. Perhaps, a pizza addict whom LOVES animals and LOVES personal wellbeing.

The relapses of pizza consumption are freaking delicious! I am a sick, sick man, but it’s worth it. I made an extremely garlic sauce including boiled (raw) Cashews & Potatoes that were pan-fried with diced Cauliflower and Onions before being blended with Vegetable Broth, Roasted Garlic, Parsley, Sea Salt, Pepper, Cayenne, Garlic Powder and Sugar.

The pizza construction will now commence. Pizza crust, Garlic Sauce, Avocado, Onion, Pineapple and DAIYA before putting the “Fakin’ Bacon” and Tofurky on. I’m cooking, now, at 215 degrees F. A slight broil here and there.

I chose not to ride today as I will be riding a decent ride tomorrow in the sub-freezing, yet, warmer sunny day. The memes saying Pineapple does not belong on Pizza are rude and incorrect.

Heatin’ that there Whiteout Chili to be later eaten is what I’m sayin’. Grillin’ a few Lightlife Dawgs to be later chilin’ needs dealin’.

Steps up from my normal cycling activities will be underway this (2017:) year and years to follow. I plan to ride close to 10,000 km (6250 miles) this year. My first ever competitive cycling event may take place this July. Also, a solo CUBS parade will be ridden the majority of the length of long Illinois.

soloCUBSparade

Being under the weather to start 2017 has allowed for good rest, just not a lot of cycling. The only two rides this year have been commutes on the coldest of days. Perhaps a longer ride today.

img_5641

WhiteoutChili MacNDaiya is self-explanatory, however, I used Macaroni, Whiteout Chili, Daiya and Smart Dogs. Click on links for further details. I found two more beers from a brewery not too far away that only furthers my respect for the brewery Triptych out of Savoy, Illinois near Champaign-Urbana. A rum barrel-aged Stout and a black IPA were thoroughly enjoyed in construction of Whiteout Chili MacNDaiya euphoria.

I’ve heard from numerous people about how this winter, in the midwest states, was going to be brutally cold and wet. I’ve realized in my time here in the midwest that January is by far the harshest winter month. Next week for the Illinois Valley there’s a high of 47 degrees F. This winter has had a few extremely cold spells and a little snow, but climate change might have a huge impact on this winter and winters moving forward.

Hang in. Have fun. Happy Weekend.

Taco Tempeh Pizza

Oh, it is 2017. Let’s make another Vegan Pizza, because I am a Pizza addict. How about a Taco Pizza, Veganly. This was super simple, mostly just prep work. I used ready (Vegan) pizza dough, because I am a lazy addict as well. Pan-fried chopped Tempeh was infused with a bit o’ oil, Crushed Red Peppers, Garlic Powder, Onion Powder, Oregano, Paprika, Cayenne, Balsamic Vinegar, Sea Salt, Pepper and Chili Powder. The Pizza was constructed with Vegenaise, Taco Tempeh, sliced Daiya, Onion and Avocado. I threw this pie into the oven as hard as I could to be slow baked for awhile before turning up the heat to add color to the Daiya. The pizza escaped the oven to be further constructed with super diced Romaine, Daiya shreds, Tomato, Black Olive, Avocado and more Vegenaise in the center.

The finished construction was broiled for a couple of minutes just to melt the Daiya shreds.

I’m going to have a big year of cycling. I have not ridden yet in 2017 because of this bug that I have acquired. I’ve ridden 700 km (435 miles) farther in 2016 than 2015. I’m assuming that I’ll probably ride 10,000 km in 2017. #RideOn

Fighting a bug can be difficult. Especially when you never fight bugs. The good news is that I am only having a mucus attack on the throat, nose and ears without a high temperature. The bad news is that I am being attacked. Warm beverages feel amazing. They comfortably numb my throat. The warm liquid condenses the ocean of mucus inside of my ear into an ever condensed puddle that surrenders drowning a bobbing floating brain. Drink up and feel better.

Apple Miter

The art of mitering is to go around all differences and to come together, cleanly, at the same angle and on the same paige. Under the weather?

Grab a sauce pot and warm it. Do what I said…. Kidding, recipes are just guidelines and opinions. Add Vanilla and Rum. Get real Cider to miter. Local anything is always preferred. Add SeaSalt/Cinnamon/Nutmeg AND freshly sliced oranges. Warm, drink and sooth that swollen tonsil. Maybe make a sandwich that is Veganly mitered with a grilled Daiya.

It is a plant massacre. I apologize for the plant genocide rampage that i took charge on in 2016. If you take offense to my plant-based lifestyle and/or to so many plant-based deaths, Screw Off:) Here’s to 2017 and much more plant consumption!

I’m curious if anyone has ever been in an actual (snow) whiteout. Where depending on light, white is all. I have experienced a whiteout once while driving during daylight.

img_5189

Where do we go when we die? As a kid, I used to weirdly daydream about life after death and a whiteout in my head is the best way to describe it. A sense of nothingness and just white. Perhaps, I’m an optimist and that is why it wasn’t a blackout. I’d like to say that our mindset as humans is in our DNA and was already decided before we were born. I rode a Bicycle, listened to good Music, had a couple of excellent BEERS and made WHITEOUTCHILI today.

I let this gigantic pot of WHITEOUTCHILI simmer on the back burner for a few hours as it is still. My theme for this idea is light and white. I chose Habanero to pack an innocent punch. I took my more traditional Chili concept and gave it a (VEGAN) white remix.

img_5294

I cooked Navy and Northern Beans by themselves first. After draining and rinsing them, I put SoyMilk on heat and added the Beans. Ingredients to follow were Onion, Yellow Peppers, Russet Potatoes, Eggplant-peeled&diced, Parsnips-peeled&diced, Tofu-crumbled, Habanero, Celery and Garlic and seasoned with SeaSalt/Pepper/ BrownSugar. After gearing up for an above freezing day, I went for a bike ride to check out a new washout bridge on the (I&M Canal) towpath. Being gone for around 2 1/2 hours, this stewing Veganisms became damn delicious and damn beautiful. I took some out and put into a warming pot and added Parsley, Daiya and I added Instant Mashed Potatoes to obtain the correct consistency. I did add a bit more sugar, also.
