Low Budget Vegan 20 is a simple sandwich. Since childhood, sandwiches have been absolutely comforting to me. I discovered the joy of Mayo and Mustard together around that same time. Obviously, my tastebuds have exponentially evolved from many years ago.

Overall, $2.40 per serving is not very low budget because of the Tofurky, but 74 cents per serving without the Tofurky. Tofurky is deliciously amazing in many palatably various ways. Purchase it, or do not purchase Tofurky. My Garmin Forerunner 235 uploaded my ride, finally. I’m drinking a Tart Cherry Beer and I’m excited to go to work in the morning. CHEERS

Seitanish Ⓥeef & kraut Pi

Happy Sunday, y’all. Yet another spin Ⓥegan spin on “corned beef and cabbage” was on the agenda today. In commemoration of a recent Pi Day, let’s take this Irish cow murder staple and adapt into a plant-based pizza pie. But, first, how’s about a heavily headwind induced mixed surface bike hike with a couple of refreshing Beers.

I am a Potato addict.

A literal Spud Web ever expanding and ever spudful is my life. This adaptation was made oil-free with Veggie Broth, Garlic, Plum, Thyme, Sugar, Sea Salt, Pepper, purple and white baby Potatoes, Jameson Irish Whiskey, Seitan and faux chicken – Cheican? The plant-based protein does start to basically shred after a little while. Ⓥ-Thou Island is simply Vegenaise, Cucumber, Red Pepper, Scallions, Garlic Powder, Pepper and Cayenne mixed together all wonderful like. The pizza pie was Whole Wheat crust, Ⓥ-Thou Island, baby Potatoes, Seitan & Cheican. The Pi was baked, slightly, before adding Daiya and slightly baking more. Sauerkraut garnished this comforting Ⓥegan delight.

Global Warming and Climate Change is absolutely evident. Northern Illinois winters seem to be shrinking as if only January is truly winter. Maybe it’s el Nino, maybe it’s just this winter, but this Illinois winter was weak. February cycling, for me, this year has been extremely friendly. Outside time has been friendly as kitchen time, for me, has depleted.

I’ve been a huge fan of these Vegan frozen Waffles that I’ve come across as of recent. My grocery store has Vegan Boca burgers on sale, at the moment, so I purchased quite a few. Using Daiya, Tofurky Chorizo-style ‘meat’, Cilantro, BBQ Sauce and Vegenaise, I made some sandwiches.

Along with the sandwiches, Potatoes were made with Cilantro, Potatoes, Carrot, ‘cream cheese’, Fennel seed, Lemongrass, SeaSalt/Pepper, Serrano Peppers and Onion.

And to reiterate, Illinois is constantly inconsistent. It has been in the 60s for the last week and this weekend the lows will dip into the 20s with some snow. Gotta love it 🙂

Tacoism

This summer an event, called The Dirty Taco, will be taking place in good ol’ Illinois. This beastly event is a double metric century gravel ride.

A recon portion went underway last Sunday and I participated. And the most common conversation was a taco. Taco is a powerful food. It can be made to please anyone. And they are easy. My own Vegan Tacos were made after getting home. Garbage was not consumed, quality greatness was consumed.

My Lettuce was mixed with Guacamole, Pico de Gallo, Vegenaise and finally my meatless protein which consisted of Lightlife ‘beef’, Tempeh, Sunflower Seeds, Fennel Seeds, Crushed Red Pepper, Sea Salt and Pepper.

Soup Evolution

Soup making is one of my favorite things to do. And a big batch of Soup is usually made far away from sober. To me, life is to harsh to live sober. Life is stressful. Life is unfair. Life is as Awesome as you make it. Evolving food ideas is imbedded in the back of my brain like a shadow from a boiling hot star casting us life. Just Photos.

Heatin’ that there Whiteout Chili to be later eaten is what I’m sayin’. Grillin’ a few Lightlife Dawgs to be later chilin’ needs dealin’.

Steps up from my normal cycling activities will be underway this (2017:) year and years to follow. I plan to ride close to 10,000 km (6250 miles) this year. My first ever competitive cycling event may take place this July. Also, a solo CUBS parade will be ridden the majority of the length of long Illinois.

Being under the weather to start 2017 has allowed for good rest, just not a lot of cycling. The only two rides this year have been commutes on the coldest of days. Perhaps a longer ride today.

WhiteoutChili MacNDaiya is self-explanatory, however, I used Macaroni, Whiteout Chili, Daiya and Smart Dogs. Click on links for further details. I found two more beers from a brewery not too far away that only furthers my respect for the brewery Triptych out of Savoy, Illinois near Champaign-Urbana. A rum barrel-aged Stout and a black IPA were thoroughly enjoyed in construction of Whiteout Chili MacNDaiya euphoria.

I’ve heard from numerous people about how this winter, in the midwest states, was going to be brutally cold and wet. I’ve realized in my time here in the midwest that January is by far the harshest winter month. Next week for the Illinois Valley there’s a high of 47 degrees F. This winter has had a few extremely cold spells and a little snow, but climate change might have a huge impact on this winter and winters moving forward.

I’m curious if anyone has ever been in an actual (snow) whiteout. Where depending on light, white is all. I have experienced a whiteout once while driving during daylight.

Where do we go when we die? As a kid, I used to weirdly daydream about life after death and a whiteout in my head is the best way to describe it. A sense of nothingness and just white. Perhaps, I’m an optimist and that is why it wasn’t a blackout. I’d like to say that our mindset as humans is in our DNA and was already decided before we were born. I rode a Bicycle, listened to good Music, had a couple of excellent BEERS and made WHITEOUTCHILI today.

I let this gigantic pot of WHITEOUTCHILI simmer on the back burner for a few hours as it is still. My theme for this idea is light and white. I chose Habanero to pack an innocent punch. I took my more traditional Chili concept and gave it a (VEGAN) white remix.

I cooked Navy and Northern Beans by themselves first. After draining and rinsing them, I put SoyMilk on heat and added the Beans. Ingredients to follow were Onion, Yellow Peppers, Russet Potatoes, Eggplant-peeled&diced, Parsnips-peeled&diced, Tofu-crumbled, Habanero, Celery and Garlic and seasoned with SeaSalt/Pepper/ BrownSugar. After gearing up for an above freezing day, I went for a bike ride to check out a new washout bridge on the (I&M Canal) towpath. Being gone for around 2 1/2 hours, this stewing Veganisms became damn delicious and damn beautiful. I took some out and put into a warming pot and added Parsley, Daiya and I added Instant Mashed Potatoes to obtain the correct consistency. I did add a bit more sugar, also.

VEGGNOG

Usually, when I use “VEGG”, it is pronounced as in “Veggie” without the ending. “Veggnog” is slightly different to rhyme with eggnog, but without torturous dairy and without murderous dead baby chickens. I’ve been subconsciously brainstorming this concept for a good year. The trigger has never been pulled and the gun was never shot until last night. Confidence was explicit and confidence was apparent of the VEGGNOG results, just because of the smell. The smell told me it was delicious before I even tasted it.

Tools needed for correct results:

  • Bottle opener
  • Beers
  • Blender
  • Plastic Container
  • Strainer
  • Jug (for storage)
  • Phone for pictures, live tweeting and Untappd check-ins

My raw Cashews were soaked for 8-9 hours. My dates were soaked around twenty minutes in the same plastic container with the Nuts and a little Sea Salt. A big batch (for sharing purposes) was constructed. I blended ingredients at four separate intervals to be combined all together with cinnamon sticks to marinate in the refrigerator. Spiced Rum was included moderately. This VEGGNOG will not be much of a family intoxicator, but ROCK out with yo NOG out!

My VEGGNOG ingredients are CashewMilk, CoconutMilk, SpicedRum, SeaSalt, Bananas, Nutmeg, Cinnamon, Dates, Cashews and imported Vanilla from Mexico. Shaken, not stirred, along with freedom and fun were KEY. Happy XMAS!
