In light Sunflower Oil, Garlic and Onion were sautéed before adding Stone Arrogant Bastard Ale. One sip was had before the remaining 15 ish ounces went into the pot. Stone Chipotle Mustard, Sea Salt and Garlic Powder were mixed in and cooked down.

Ⓥegan ‘cream’ was added into a boiling Beer stew. ‘cheddar’ Daiya was stirred in at a continuous high heat. Nutri Yeast and chopped Jalapeño complimented with frozen Ⓥegan Meatballs helped deliciousness to come one step closer.

Scallions were dropped in at the very end and Instant Mashed Potatoes to control consistency. Pretzel Hoagies were warmed and filled before being slightly toasted.

Beyond Taco Pizza Burger

Beyond Meat’s Beyond Beef was used, but thinned out to adding wholesome veggie heartiness and texture.

An instant Rice mixture (Brown, Red, Wild & Quinoa), Pico de Gallo, Tomato Sauce, Roasted Garlic, Roasted Corn, Sweet Potato, Daiya and light seasonings were mixed with the Beyond Beef. Controlling consistency was instant Mashed Potatoes.

An Earth Balance’d Bun was topped, one side – Ⓥ ‘sour cream’ & Cilantro, the other – Refried Beans (Pinto, Chipotle in Adobe, Garlic, Carrot, Crushed Red Pepper, Nutri Yeast and Cilantro).

Daiya Stuffed MacN Daiya Pi

Mac N Daiya was prepared as normal for a second. Imagination was evident and severely utilized. Fire roasted tomatoes, Chives and Cucumber were added to the slightly undercooked Mac. Crushed Red Peppers and Soy ‘chorizo’ was mixed in on a low//medium heat before adding the mouth watering Daiya ‘cheese’. Lightly salted and peppered, excitement was immense.

Beyond Meat Crumbles and Garlic were pan-fried in light Oil before adding Veggie Broth and Seasonings (SeaSalt, Pepper and a few CrushedRedPepper).

Soon after, Orzo Noodles were added with a medley of riced Veggies (Broccoli, Cauliflower and Carrot). Once the noodles reached the state of slightly undercooked, Daiya ‘Alfredo’ was added with sliced Spinach and Nutritional Yeast.

Adapting to the desert has been a trial/error process. Surviving while Riding a bike and drinking beer all day in Illinois was easy compared to riding a bike and drinking one beer for one hour in the desert.

Pineapple Juice mixed with Seasonings, Scallions and Instant Mashed potatoes to act as a “Sauce” on a tortilla. This Tortilla with its “Sauce” was topped with Daiya, Avocado, Pineapple and a separately prepared meatless Crumbles, Corn and Garlic. This beastly flat Taco was baked for a bit, but heavy as hell.

Daiya Snack Attack

In the past, Daiya Mac has been purchased just for the Sauce. Today, Daiya Sauce without noodles was purchased for the first time. Sesame Seed Pretzels were also purchased. One of the Sauce packets were opened and Pretzels were dipped and plated. After a couple of pictures were taken, these pretzels were happily and joyfully consumed.

A new Veggie patty was experienced and enjoyed the other day, differently.

The All-American Ⓥ patty was pan-fried in light oil to be set aside. Good Bread was fried appropriately with Earth Balance “butter” before being crafted with Daiya, Ketchup, Mustard, Grilled Onions and Pickles. Lathered with more Earth Balance, the patty was added and pan-fried, lastly.

Lettuce, Sunflower Seeds, Tomato, Northern Beans, Cucumber and grilled Jalapeno were topped with a Plant-Based protein-heavy Daiya Melt Sandwich, cubed.

O’Brien Potatoes were roasted and broiled before being tossed in Earth Balance ‘butter’ and Daiya.

In a separate pot, Pickle Juice, Pepper and Garlic Powder were brought to a simmer. Northern Beans, (Instant) Brown/Quinoa/Wild Rice mixture, Beyond Meat Crumbles were added and heated until the Pickle Juiced infused and evaporated.

After the Daiya melted, the two seperate concoctions were combined with chopped Dill Pickles. Tortillas were warmed. Tortillas were stuffed and folded.
