This took maybe 15 minutes to complete pending the Seitan was made before hand.
Ⓥitalia Insalata ingredients:
-Tofu, not too much
-Spinach, organically tasty 🙂
-Raw Cashews, toasted
-Onion, Julienne sliced
-Kalamata Olives, & juice/brine
-Manzanilla Olives, & juice/brine
-Seitan, chopped bigger
-Vegenaise
-Balsamic Vinegar
-Chipotle Powder, or Hot Sauce
Giant leaps:
-Saute Onions and Seitan for a few minutes. I used just a tad cooking spray and added Manzanilla brine and Balsamic Vinegar. I let simmer for a few minutes before adding Vegenaise, Chipotle and Kalamata brine. After mixing and stirring, I then added a generous amount of Spinach and tossed and turned for a couple of minutes. I did strain the salad before plating it and then topped with Olives and Toasted Cashews. mmmmmmm
